  • Any STACers have a....

    Soup recipe? I'm looking for that "comfort" food to help me through. So I'm looking for a really low carb soup recipe. I checked out Linda's site, but nothing really fit my fancy there.

    Anything you guys may have would be appreciated! I tried my fav veggie soup, but miss the carrots and the corn too much to eat that.

    My sister-in-law has a taco soup recipe that I can modify - waiting to get that from her and then I will share it.

    Taco soup without the taco is just a great Chicken Soup. I make what I call "What the he11" soup, I put a qt of Chicken Stock and a qt of Beef Broth, a can of tomatoes and whatever the heck I have in the refrig that needs to be cooked. Sometimes it's great, sometimes only good but when it's only good, I add a Tablespoon of sour cream and a tad cheese and that improves everything.

      That's a great idea, Desertthorn! I'm looking for a good soup too, and i love the idea of taco soup. I just bought some low sodium organic chicken broth yesterday, and i would love to make something yummy and comforting today (i still have that nasty cold!) Soup is so good...

          I love the organic broth! I used mine to make the egg drop soup. It was okay. I added canned chicken to it to jazz it up. Grate one carrot up in the soup - give the illusion there are lots of carrots. I kinda just toss in whatever veggies I have left over.

          I hear the taco soup is good though.

            I have never tried egg drop soup. May be worth a shot, except that carrots are further ahead on OWL. I'll have to keep that idea though! Thanks Rachel!

              It was okay - very bland to me. But I added some seasonings and chicken and all was well. I'm a visual eater, so just seeing flecks of carrot in there would be enough to make me think I was eating them. Guess you could use red/orange peppers instead.

                    I like to do new england clam chowder

                    canned clams
                    chicken broth
                    butter
                    cream
                    celery
                    bacon
                    cauliflower instead of potatoes

                    Basically find any new england clam chowder recipe take out any high carb stuff and substitute with low carb.

                      Thank you ValidRouge! I would be curious to work with that type of recipe and take out seafood (I know, I know, I should really give seafood more of a shot).

                        Use chicken or beef or pork as the meat. I would imagine any of it would be good.!

                          Oooh, that is a great idea. We always have one of the "big three" on hand. LOL

                            I wonder if ValidRouge's recipe would work to make a seafood chowder with lobster and scallop? Anyone tried it? If so, do you taste the cauli alot?

                              Crawfish chowder... (You can use the frozen crawfish from Walmart). Chop one onion, 3-4 cloves of garlic, a couple sticks of celery, and a bell pepper. Sautee them in butter. When they lighten, add one 8oz block of cream cheese and heat until it softens. Pour in two cans of chicken stock and heat, stirring consistenly until all of the cheese has mixed in. Add the crawfish tails and heat a little longer. I guess if you have an aversion to crawfish, you could use pretty much any meat.
