    Josie, that sounds delish. I've never had crawfish but I'm gonna try it tommorrow with lobster, scallop, and clams (although I better check to see if I can have clams)

      I love to cook, and anything with sour cream makes most people happy, I've found. A spicy southwestern chicken soup can be made simply by adding some chili power and cumin, a touch of cayanne . . . . dollop of sour cream and a spinkle of fresh chives or cilantro tates yummy and makes you feel special because it can be so pretty. We eat first with our eyes.

        Oooh, I like the idea of a southwest chicken soup. What do you use as the base - chicken broth? (Sorry, I am such a non-cook, but I would love to try this one).

              Menudo is a spicy soup made from beef tripe. If you are not up for beef tripe, just use a fatty beef. It is not the same, but beef tripe is not for everyone. Also, if you are on induction, no hominy. This recipe is made in gallons...and since it is a special "party soup" and takes 8 hours to stew (to soften the tripe) it is made in big quantities for special occasions. But Mexicans swear by it for a cold cure! And all those spices are sure to get things flowing.


              "japones"= japonese- look for chinese dried peppers
              "de arbol" = tree - look for another type of peppers, or use chili pepper powder

                  I meant interesting and *good*. I love soups!!! Definitely looks like something I would eat. I dont' really know what beef tripe is either, so I'll have to look that one up. But I love mexican food, so I have no doubt I'd really enjoy this.

                    I'm with Rogue, Carpender book had a clam chowder recipe using turnips and it was delish! It was 11 grams of carbs though or Id post the recipe. I also didnt have 2 cans of clams and used one can of salmon, one can of clams.. hubby didnt even know it was low carb.

                          ok... I will be good. Beef tripe is beef stomach. So you could make it with a nice roast, and it would not be Menudo, but Mexican Beef Soup.

                            Heres a link to that Chowder I was talking about before. Be sure to try it out when you can allow yourself the carbs. It really is good.
