  • Counting Carbs Correctly

    I'm making roasted cauliflower to go with my grilled pork chops. MMMM

    I'm wondering about counting the carbs correctly. I'm allowing 1 cup of cauliflower as my "other veggie". That's 5 carbs. But that's if it is fresh cauliflower, right?

    I'm using an entire frozen bag and it says 3 carbs each serving. There are 4 servings. So that's 12 carbs total. Then the fiber says 2 carbs per serving. So that's 8 fiber... subtract that from the carbs.. you get 4 carbs total for the bag.

    So I count the entire bag as 4. Right?

    How big does it say a serving is. Sometimes its not a cup. Fitday says 5 carbs - 2 fiber for a total of 3 for the cup!

      A serving is 3/4 of a cup with 4 servings in the bag. I did the math according to the serving sizes. It says one serving is 3 carbs with 2 for fiber, so actually it's 1 carb per serving and there are 4 servings, so 4 carbs total for the bag. Right?

        Yep, I would totally follow the nutritional info on the bag. I have to think its the most accurate way to determine our carb intake.

          If it's something whole foods like cauliflower, I'd go by the label on the bag BUT if a package of food has added ingredients which are carbs, often the label will have rounded down the grams of carbs per serving. FDA allows this -if the amout is under 1/2 gram they can legally put in a zero. So companies wishing to take advantage of this have in some cases simply reduced package size and stated portion size to make that "0 carbs" advertising possible!

          "(6) Carbohydrate, total" or "Total carbohydrate": A statement of the number of grams of total carbohydrate in a serving expressed to the nearest gram, except that if a serving contains less than 1 gram, the statement "Contains less than 1 gram" or "less than 1 gram" may be used as an alternative, or if the serving contains less than 0.5 gram, the content may be expressed as zero. Total carbohydrate content shall be calculated by subtraction of the sum of the crude protein, total fat, moisture, and ash from the total weight of the food. This calculation method is described in A. L. Merrill and B. K. Watt, "Energy Value of Foods--Basis and Derivation," USDA Handbook 74 (slightly revised 1973) pp. 2 and 3, which is incorporated by reference in accordance with 5 U.S.C. 552(a) and 1 CFR part 51 (the availability of this incorporation by reference is given in paragraph (c)(1)(i)(A) of this section)."

            yep you got it right 4 for the bag them just figure how many servings your final dish has and go from there cause if you are adding stuff to the cauliflower a cup will not be all cauliflower.

              Great. Glad to know I'm doing it right! I had 5 more carbs to go.. and I was ate the entire bag! GASP! It shrinks.. and omgosh, it is soo darn good! Great to fill up on veggies.

              I have always used what was on the packaged product. If there was no information available or it was fresh I used the count in the book to help me gauge it.

                EEK you ate the whole bag??? remember Atkins is about only eating enough to satisfy our hunger even if we have room in our belly for more and/or carbs in the budget leftover.

                better to under eat your carbs then over eat your foods.

                  Rachel, I hope you're in OWL, because if you're in induction, you just cheated, as only 1 cup of cauliflower/day is allowed on induction max, assuming you had no more than 2 cups salad veggies.

                      Don't you just love Atkins and OWL?

                      Roaster cauliflower. Hmmm....sounds interesting. Mixing in a little melted cream cheese to a cup of cooked cauliflower and it's like eating a "baked tater".
