    ok, i'm getting the hang of this cafeteria thing!

    the trick to atkins is creativity, really... tuna on tomatoes with a little shredded cheese. yum yum!

    i'm also taking up swimming. I swam competitively in grade school, then switched over to running, but now that my ankle's messed up, I'm going to go back for a little while.

    I bought a new cap and goggles and hit up the pool yesterday. I forgot how great of a workout it is!! My arms felt great afterwards! and i love just getting your body breathing heavy and a good cool down and stretch afterwards.

    oh~~and I also turned down several invites to go to the bars tonight... no beer for this kid.

    ok, so no more disappearing for me anymore... hopefully i can handle the stress just fine once classes start on wednesday !

      hey Bee! i work at a university, so I know all about cafeteria food. I really like ours, in fact. On any given day, I can get, at the very least, a chef salad or a create your own deli sandwich--where i use lettuce leaves instead of bread to make a sandwich. I can also take the bread off hamburgers, eat the toppings off of pizza every day. Usually there is a wok-style grill where they stir-fry some sort of meat and vegetable. 2-3 days out of the week, I can get some sort of carved meat and vegetable.

      It is about being creative. Sometimes I have to go stand in line at several of the "stations" in the cafeteria to get the "ingredients" to put together my Atkins friendly meal. That's okay, because at least we have the option.

        well today i discovered a neww addition to our campus that i'm really psyched about. a chopped-salad restaurant where our pub used to be. sooo now, we've got this little place where you walk in, fill out a form saying what you want on your salad, its made and chopped and mixed for you, and it all comes off the meal plan!

        we also have a great stir-fry area, and grilled chicken offered at every meal (but it's kinda funky...)

        i'm trying really hard to mix things up so i don't get bored. i actually think breakfast is the hardest because i live far away from the dining hall, and walking down there in the morning is a hassle. I'm hoping to buy some eggbeaters this week and just cook them downstairs in the morning, because the only other "convenient" breakfast items are cereals and toasts and granola bars.

          Oohh that salad place sounds great!!

          As far as breakfast....you can consider walking to the dining hall as exercise in the AM!!

          Orrr, see if the local grocery makes boiled eggs. I know the one by our campus does. That way, you can keep the boiled eggs in your fridge in your room for quick breakfast. Or, at Walmart they have all sorts of little microwave accesssories for cooking eggs.

          Orrr, make sure from your dinner you always have leftovers for breakfast.
