  • Flour - almond

    I was browsing the recipe forum and saw lots mentioned of almond flour. Has anyone here ever made their own? Any other types of flours you used? I'll have to invest in some almonds if I can make my own flour.

    Oh yeah. I buy raw bagged almonds at Sams Club. I put them in the freezer and when I want some almond flour, I grab a handfull and throw them in a coffee grinder and grind them until it's flour consistency.

    I then use the flour to make muffins, breading for fried chicken or vegetables. It's really good stuff.

      Thanks, Joy! I'm craving that parmesan chicken like you would not believe. I think a trip to Sam's is in order soon.

      So many discoveries with food. Who'd of thunk it?

          Joy....wanna come cook at my house???? I'm too lazy to grind my own. Buying a bag or by the pound at the local health food store is my game.

            hey don't forget to sift it first before you measure homemade if you are doing a baking food like bread with nut flours.

            toast them and you will get a great flavor but if you are breading a food don't cause they will toast in the oven anyways.

            be careful not to over gring them or you got almond butter.

                only legal stuff for 14 day induction is listed in chapter 11 of your DANDR. nuts are an OWL rung 3 chapter 14 food unless you are doing extended induction and then you can have an ounce of nuts per Dr Atkins page on nuts in the carbohydrate chapter 7 discussion.

                you can use protein isolates you can use grated cheese like parmegean you can use flax seed meal I think Naja has a psyllium coating for frying in the low carb cooking school section.

                all the "low carb flours" and bake mixes are OWL foods

                  This sounds delicious. I've haven't tried almond flour and didn't think about grinding it myself. I can't wait until extended Induction. Thanks for the ideas and information everyone.
