Hubby snagged me some almond flour as a treat! Whoo hoo, what a treat!
Last night I had tilapia rolled in almond flour and parmesan cheese and seasoning and baked in the convection oven. I had roasted cauliflower on the side. Kinda too much white (I'm a very visual eater) but it was so good to have crunchy fish! And the mild nutty flavor was wonderful! We were out of old bay - darn it! - but it was so good!
Next time I"ll batter only one side of the fillet as the under side really doesn't get crispy and I don't want to waste my almond flour LOL
