  • *sneaking back in* hehe

Well, I am back... after trial and error and more error... I have decided to go back on Atkins... in trying to make myself stay on weight watchers I have regained several lbs... I honestly never ever thought I would let myself get back up over 200lbs again, and here I sit... at 206.2. I think it may be up a bit b/c of a bad weekend/week... My uncle passed away last week and I was in Wisconsin...eating horribly... especially on the trip up and back... anyway... no excuses, just here to get the weight off for good this time!!! I will stick with this and get this off for once!!!!

I started Atkins today so far breakfast, 1 egg with some cheese and smoked sausage... drinking a diet soda now, but off to Walmart in a few to pick up some goodies and water bottles.

I am also starting a challenge to myself, I may post it in the challenge board later, we'll see... to drop 16lbs by New years(10 weeks). I won't be too awful disappointed if I don't make it and I HAVE tried. But, this gives me something to try for and if I fail b/c I was lazy or cheated, well... thats just not going to happen!!!!!!!!

If anyone has any ideas for beginning induction for snacks I would love to hear them... I will be picking up the regular celery, pepperoni, cheese, etc. but I would love to have some new ideas, especially since it seems to me the first few days are the hardest and make me the hungriest!

Well... I look forward to seeing all these familiar people and making friends with you newbies!!!!! Hope you all have a great day!!!!!

Hi Rikki! I was wondering where you went. I'm happy to see you here again. Do you like devilled eggs? That's one of my favourite things and this is the only plan you're allowed to eat them on which makes them seem sinful although they are fully legal. I also like cheese chips. Crunchy munchy but they don't turn your fingers orange and they are self-limiting so it's hard to overeat them. Good luck! I'm sure you'll reach your New Year's goal.

Hi Rikki. Like you, I'm just coming back, too. Today marks the beginning of my 2nd week of induction. For snacks, I like cheese chips dipped in a smidgen of sour cream. I also enjoy cinnamon pork rinds (porks covered in butter, splenda and cinnamon), as well as "cheese cake" (a mix of cream cheese, splenda and cinnamon). Don't go overboard with the splenda though...if I remember correctly, one packet of splenda is = 1 carb. I've also had pork rinds with a salmon/cream cheese dip....delicious! Check around on the internet and you will find some great recipes for nearly any food that interests you. I also found some good ones at www.sugarfreesheila.com. Let me know what other snacks you find....

Thanks... I have to stay away from the cheesecake one... haha, I can't buy it cause i will eat toooooooo much of it! Also, I rarely eat pork rinds... soo much salt in them... but I do occasionally if I want a crunchy snack! I agree sugarfree sheilas site is fab! also lindas low carb recipes are great!

Welcome back to Atkins, Rikki. I'm sorry about the loss of your uncle. I just lost my aunt, and it's hard when there's so much food around.

For snacks, I keep posting all over about the ''taco bake'' recipe. LOL But it has kept me loving the Atkins diet and not even wanting to stray off plan. Just search, "taco bake" here on ADBB. I make it all the time in the 9 x 13 pan and also a muffin tin. I add lots of pizza toppings to it. Check out your Induction cheese, meats and veggie lists and load it up while keeping track of the daily carbs and cheese. It's a great meal as well as a little piece for a super snack and very filling. I know the "crust" could also be changed up a bit and turned into a dessert with cinnamon, Splenda and a small topping of home made whipped cream and sugar free syrup, etc. Flax meal could be added. There's so many yummy recipes here for just about anything you want, like "cream cheese danish" and flax meal cookies. By the way, many of these cream cheese recipes are for one to two portions only.

                    Welcome Back Rikki,

Here is my favorite snack from Linda's website... the variation towards the bottom...and they help get your water in!

                    http://www.genaw.com/lowcarb/jalapeno_poppers.html

My other usuals are pepperoni chips (even DH loves these), celery w/ cream cheese or salsa, deviled eggs or roll ups (roast beef or ham with cheese and mayo).

Looking forward to getting to know you!
