  • What's for supper-Thursday

    I'm hungry. Really hungry. I just ate a cucumber with Ranch and real bacon bits sprinkled on top and I'm giving it 20 minutes and a couple of glasses of water. Hopefully it will pass. I think it was my not getting enough in yesterday is catching up with me today.

    Last night was Wednesday - pizza night. I'm at a loss what to cook for supper tonight. They have some red beans and rice left over.. but I'm at a complete blank as to what I'm hungry for.

    What are you cooking tonight? I'm thinking a soup since its damp and muggy.

    I'm working late tonight so I brought a hamburger patty to work with me, and a small salad.

      I think this is dinner (unless DH throws a monkey wrench in my plan again)

        Rachel, cucumber, ranch and bacon bits wouldn't last me 5 minutes!! LOL

        I don't know what's for dinner, but for lunch I had a salad with lettuce, tomato, black olives, cheese, cucumber, jicama, walnuts and a little bit of chicken. Sliced turkey breast and baked acorn squash...oh and a few pieces of honeydew melon.
        The cafeteria was doing Thanksgiving meal today.

        I've never had acorn squash before. OMG I'm totally making that again. It was delicious!!!

          I'm cooking pepper steak (minus the gravy) and broccoli sauteed in olive oil and garlic. With it, I'll have an Atkins "roll". For dinner, a little cream cheese with splenda and 1-2 TBS of pumpkin. Getting hungry already....

              I normally don't eat until 9.. and that's usually a snack, like the cuke. Then at 12 I have lunch. This morning I was late with my snack.. guess that's why so hungry. I whipped up some canned chicken breast, mayo and dill pickle.. that seemed to hit the spot.

              The only bad thing about Atkins is you have to practically fix or cook anything you make. No prepackaged stuff.. no popping something in the microwave..(unless you cooked it first).. Hubby was having left over pizza.. quick and easy..I had to assemble mine first. GRRR.

              Everyone sounds like they are eating well!

                I cooked hot dogs in the frying pan, sprinkled them with onions and then put cheese on top and micro'd that...I call it a coney dog....low carb dogs...
                It's like a comfort treat!!!

                  Well...
                  My boyfriend and I have been planning to make these prosciutto-wrapped scallops on the grill, but we keep chickening out...or at least he does! I think they'll be delicious, but he's wary of seafood. Who knows if we'll get around to cooking them tonight...if not, we'll probably have cheeseburgers on the grill. He has his on a bun, I cut mine in half and wrap the pieces in a big lettuce leaf...it's like Montana sashimi.

                  My other guess would be tacos, but I've already had 2 servings of cheese today so that might limit me to one cheesy taco shell...hmmm.

                    I'm cooking chicken breasts as I type this. I'm going to make chicken salad with them -- adding mayo, sugar free relish, celery, and walnut pieces. I'll probably have the salad with some slices of tomatoe and a bit of brie.

                      Jess....I have been craving hot dogs!!! Passed a Sabrett's hot dog man yesterday and began to salivate! Can I have hot dogs during induction?

                        Check the ingredients on the package, Rae. If the ingredients are induction legal than the hotdogs are, as well. You'll notice, as you browse through the different brands, that the carb count will vary widely.

                          Turned out we went out for dinner...

                          Had 1/4 French Onion Soup sans bread (ate broth, no onions) 1/2 Rib-eye steak, roasted veggies
