I know, I should be posting this in the recipe section, but it is already there!! I had the most fabulous supper tonight. I have had a small hankering for something on the sweeter side. Not like a chocolate cake, but something. So I went to my recipes which I have printed off from the boards and made French Toast (or Pancakes). There were Incredible. I mean Amazing. I am going to treat myself to them once a month from now on. I will post the way that I made them (I tweaked a bit from original) and hopefully you will enjoy as much as I did!!
French Toast Pancakes
2 eggs
1/4 cup heavy cream
2 tsp splenda
1 tsp cinnamon
1/2 of a 3 oz bag of plain pork rinds (don't dis til you try!)
Makes 3 nice size pancakes - 7grams of carbs total for all pancakes
1)Mix eggs, cream, sweetener and cinnamon
2)Crush pork rinds (I use my blender, the finer the better!!) and mix with above mixture
3)Allow to soak until it becomes a nice thick, goopy batter (approx 5mins)
4)Fry pancake style in butter until browned and flip over.
You can serve with Atkins Syrup, or your own low carb syrup. I used the sugar free Log Cabin brand syrup. 2 TBSP was PLENTY enough for me. It contained 6gm of carbs for 2 TBSP. All together I had a Yummy supper with a grand carb total of 13gm.
