  • Chayote Squash

    OH.MY.GOSH.

    Friends, run out and getchew sum, now! I washed, peeled, sliced, cooked in nonstick skillet with butter, cin. and splenda until dark brown and YUMMY!

    You just know I'd have questions! I loaned my book to a friend. I need to know if it's okay on induction and what catagory of veggie does it fall under? Rung 1? Other veggies? and how much can I have!?

    I wanted to take just 1/4 of a tortillia and rip it into smaller, itty-bitty pieces and stir around in the goo in the skillet and hopefully taste like an apple pie! I was too afraid it would send me back to the store for every chayote in the joint LOL

    I just discovered the wonderful taste of chayote squash (little did I know it is the merliton, as we in Louisiana know it). Anyhow I just rinsed mine good, pierced it with a fork and microwaved it for 10 minutes, delish! My daughter did like you and added the cinnamon and butter to hers and she loved it. All these years I have been eatting the stuffed merliton, now I know how to enjoy it alone.

      Oh you guys! This is one of my favorite topics around here!!

      I've made the cinnamon apples out of the chayote. Yum. Serve it with pork loin, it's wonderful.

      Peel it and boil it with splenda and cinnamon. when its soft, mash it up and add a dash of lemon, now you've got apple sauce. http://www.atkinsdietbulletinboard.c...hlight=chayote

        Chayote Squash isn't listed as acceptable but that isn't because its not, its just that its an ethnic veggie that isn't well know. Bitter Melon isn't listed either nor are green tomatoes, etc. I believe in my heart that it would be on the acceptable list and only 2big could even attempt to try to talk me out of it. LOL Until that time comes, enjoy your new apple pie and don't forget the cheese.

            Sounds great! I'm gonna get me some and have it for desert tomorrow, while everyone else is pigging out on some pumpkin pie!

              If you want the chayote to taste JUST like tart granny smith apples (the kind used most often in pies), add a dash or two of key lime juice toward the end of cooking the squash (skillet method...I added cinnamon and butter and splenda)....VERY good. I swear I could not tell that they were not apples! Hubby is coming home from work in a few minutes...and I am going to see if I can fool him! Hehe!

                Oh yum. I passed up the chayote tonight at the grocery...thought about picking some up to make the apples...but I didn't because I'm trying to stay away from sweet desserts for another week or so.
