  • new food of the week - smoked salmon

    Last year I tried this for the first time at our office party. YUMMY! I treated myself to some and tried it this morning with cream cheese, lemon juice, pepper and green onions and ate it on slices of jicama. Oh my, I"m so fancy!! It was wonderful.

    Next time, I'm laying out the salmon, spreading the cream cheese on it, squirt of lemon, dash of pepper and cutting it in thin slices. It was a mess all mixed up in the bowl and trying to cut the fish and get it on a stick of jicama. Live and learn.

    I make smoked salmon/cream cheese rollups for parties - sometimes with asparagus tips in the middle!

      Hi Rachel, Those sound really good, and I'm going to try some too. Thanks for the ideas. I plan on trying this recipe soon. It's an Atkin's recipe from Dr. Atkins' Quick and Easy New Diet Cookbook-1997 It looks realy good.

      Smoked Salmon Frittata

      Total Carbohydrates: .5 gram

      4 large eggs, lightly beaten
      1 ounce smoked salmon, chopped
      1 teaspoon chopped fresh chives
      1 tablespoon sour cream
      salt and pepper to taste
      1 tablespoon butter

      Preheat the broiler.
      Beat together the eggs, salmon, chives, sour cream, salt, and pepper in a bowl. Heat the butter in a 10 inch flameproof skillet (preferably non stick) over medium heat until the foam subsides. Pour in the egg mixture and cook, stirring, about 1 minute, until the egg starts to form curds. Cook for another minute (the egg mixture should be set on the bottom and still a bit wet on top). Place the skillet under the broiler and broil about 2 minutes, until the frittata turns golden brown. Using a spatula, carefully remove the frittata from the skillet. Cut into wedges and serve.

      Serves 2

        Oh, and here's this one. It's also Atkins' from the same book as the recipe above. I made this all the time on my first time on Atkins. It's delicious!

        Smoked Salmon Dressing

        Total carbs 8.5 grams per cup


        Great on mixed greens, salad, and also yummy when served with steamed asparagus or used as a dip.

        1/4 cup sour cream
        1/2 cup mayonnaise
        1-1/2 ounces smoked salmon, thinly sliced
        2 teaspoons white wine vinegar
        3 teaspoons fresh lemon juice
        2 tablespoons scallion (white part only), chopped
        2 teaspoons white wine vinegar

        Combine the sour cream, mayonnaise, salmon, vinegar, lemon juice, and scallions in a food processor and puree for 1 minute, or until smooth. Serve immediately or store in an air tight container in the refrigerator for up to two days. Makes about 1 cup.
