  • What's Cooking?

    I'm trying to get more organized in menu planning. So far so good.

    So, whatcha cooking tonight??

    Tonight we are having baked chicken leg quarters. I'm thinking of making BBQ sauce to baste when it's nearly done. Not sure yet - depends on time.

    Veggies are either green beans with bacon and onions.. or broc. salad. Or maybe steamed broc. So many choices Gotta love it!

    The family will have garlic bread on the side. I"ll have more broc LOL

    Last night I had Spaghetti. I'm on OWL, so everyone keep that in mind.

    Dreamfields pasta (2 ounces) was a perfect size. I made ground beef, onion, mushroom and tomato sauce for a topping and some cheese. This was VERY good. My DH was in heaven thinking we were having something *bad*. This morning I made an omelet with some leftover sauce. Yummy.

    Not sure what I'm going to make tonight for dinner, except I'm thinking about stopping at the store, getting some ground pork to make a stuffed burger that would be stuffed with "eggroll" type fillings--cabbage, bean sprouts, and the like. I've also got to figure out a way to make a plum sauce. So, I'm off to search the web for ideas.

      I made Whitecastle Hamburger Pie, broccoli, some cucumber slices and 2 stalks of celery stuffed with chive and onion cream cheese. Yummy.

        Portabella mushroom stuffed with spinach, sausage, pepperoni, tomato, pesto sauce, and topped with mozzarella and parmesan.

            Funny you should ask... Beacuse I just left the kitchen deciding that very thing. Tonight will be stir-fry -shrimp for us and turkey for the kids - neither of the kids will eat shrimp (more for me! Ha!). We fried several turkeys at Christmas and the freezer is stocked...so we'll add in some veggies, EVOO and seasonings and that will be that...it's my favorite sort of dinner - the kind that doesn't dirty every pot in the kitchen! LOL! I swear that I need to go buy another set of measuring cups and spoons though...I run the dishwasher everyday, but I swear those things are always in the dishwasher!

              How do you make the BBQ sauce? When I was out shopping the other day, I headed for the Carb Options sauce only to realize that WalMart doesn't stock it any more. I'm not sure they stock low-carb ketchup either, although I didn't think to look for that.

              I'm having roast beef with a salad for supper, Day 2 of Induction. I am putting low-carb steak sauce on it I guess. I am not very creative with meals and cooking. I am going to browse some low-carb recipe sites for some ideas.

                There is a thread (probably needs to be bumped up) with lots of recipes! Worth reading through it. I'll just copy/paste from my harddrive.


                Tangy BBQ Sauce

                1 stick of butter

                1/4 cup vinegar

                1 cup tomato sauce

                2 Tbsp. Worcestershire

                1/2 Tbsp. salt

                1 Tbsp. mustard

                2 tsp. lemon juice

                1 tsp. hickory liquid smoke

                4 tsp. Sugar Twin (I used Splenda, and I used 3 packets)

                Melt butter, add vinegar and then other ingredients. Stir until well blended. Bring to a boil, lower heat, and let simmer a few minutes.

                Carb count varies.

                  Tonight hubby threw on some sirloin steaks on the grill along with grilled zucchini.
