  • What's cooking, Friday January 19

    It's Friday! Now, that does not mean a relaxed menu by any means. The weekend is coming and we must plan ahead.

    I do my shopping on Wednesday's so my weekly menu goes from Wednesday to Wednesday. Weekend meals usually use up what leftovers we have. I'll bake some more chicken tonight and then use the chicken in jambalaya for the kids over the weekend. I'll just eat more chicken MMM Maybe I'll do some "fried rice" with chicken... or even some BBQ chicken sandwiches! MM I'm making myself hungry. so many good options.

    I am so glad someone posted this because I've run out of ideas and wanted some inspiration!

    I am thinking either meatloaf tonight or Green Enclilada Chicken Casserole:

      the green enchilada chicken casserole is really really good. You can't go wrong there.

      I think we are having grilled sirloin steaks and roasted asparagus tonight for dinner.

      Last night I did the stuffed pork patties. I made one with cabbage and bean sprouts and one with chayote squash made like cinnamon apples.

      Peel and de-pit the chayote, slice like apples and boil in water with cinnamon and splenda until cooked.
      Sautee the cabbage and bean sprouts in olive oil until soft.

      Make patties out of ground pork (thin)
      put one patty down first, put the chayote or the cabbage/bean spouts on the patty, then top with another patty and pinch the edges together. Bake until the pork is done and season as you like.

      This was very yummy.

        thanks for the post. I could use some ideas. Jamie, I'm having the enchilada casserole in a few minutes (for the first time) for lunch. It smells really good and I love Mexican food. Joy you sound very creative. Maybe I'll try that recipe next week after I get the ingredients at the store. I'm thinking of a garlic fish recipe that I saw on the back of the frozen perch bag for myself. I'll probably bread the fish for my family. I'm having sauteed snow peas with it.

          I'm so glad yall like the threads! For me, the worst happens when I fail to plan my foods, and I cannot plan them when I run out of ideas.

          I love seeing what others are eating and getting ideas. I'm thinking hamburger patties stuffed with cheese! MMM and onions... And fish and mexican dishes... ohoo.. my menu has just expanded

            I am thinking of chicken tonight...in one of the following ways:

            Chicken and broccoli alfredo with spaghetti squash.

            Chicken stir-fry with bamboo shoots, bell peppers, water chesnuts, broccoli, snow peas.

            Chicken parmesan--chicken coated in almond meal and parmesan, cooked in olive oil, then baked with sauce and cheese.

              For lunch I had chicken vindaloo from WholeFoods and a salad. Dinner is going to be london broil with an artichoke salad. Exciting, eh? :P

                  I don't really know what I'm having for dinner. But Julirama's chicken and broccoli alfredo with spaghetti squash sounds delish. We're going to a concert tonight--I think we'll stop somewhere and get a bunless burger and a couple of salads. Both my boyfriend and I enjoy this WOE, so it really helps that we are on the same page. But you know what? I'd love to just have a little drink tonight. I'm not a big drinker, but when you take the option of a white russian away, I turn into sad girl.

                    DH and I loved it also! I'm planning to make the Sloppy Joe's Unstuffed Peppers tomorrow for lunch so I can leave the peppers out of my kids' portions. Some of my other favorites are Cajun chicken breasts, homemade rotisserie-style chicken, and taco salad.

                      Well i took my girls out to dinner since hubby was working and i have been cooking all week i wanted a break so we went to outback steakhouse and i ordered there no rules burger without the bread and topped it with mushrooms, bacon, tomato and lettuce and blue cheese dressing with a side of steamed green beans.
