  • January 22 - dinner!?

The sun is trying to peak through here in the south and that always boosts my spirits!

    What's for dinner everyone?

I have some leftover baked chicken - which was soo darn good! I think I'll chop it up and make chicken BBQ sandwiches. I'll eat mine in a salad or a quesadilla... something! I have some leftover broc. salad - which for some reason didn't taste as good as the first time I made it. Will have to check recipe again.

I have done so well with my menu planning and shopping. I'm eagerly awaiting Wednesday to see what's on sale and what I can stock up on. I'm a nerd!

Rachel--I'm a total food nerd, too!

Tonight, I am getting a nice steak and caesar salad for dinner at a restaurant. We didn't get to go as planned over the weekend because bf was sick. But we are celebrating me passing my first round of cosmetology test and it's out on the town tonight!

Broccoli salad sounds yummy, I think I'll look up a recipe for that!

            http://www.genaw.com/lowcarb/index.html

There's the link to the site.

I made meatloaf, green beans, and faux mashed potatoes. The serving size was 2.25 cups! I had about a cup and I was stuffed...plus, I don't know if I can eat those again...I was getting a little nauseous towards the end there. I guess I should have stopped sooner. They are not bad and I like cauliflower ok...I guess I don't love it though....
