  • 1/23: What's for din-din?

    I like these threads, I have been getting great ideas from them. So I wanna keep it going! I am making an everything but the kitchen sink meal tonight. I really needed to get rid of some veggies in the fridge and other random things. But I don't really have any idea what it is that I made! haha!

    I cooked hamburger meat in garlic and red peppers and olive oil. I layered it in a casserole dish and then put chunks of cream cheese evenly over the top. Then, a layer of Italian cut green beans followed by a layer of faux califlower mashed potatos and topped it off with grated colby cheese and plenty of pepper. For a side dish: green salad with avocados and mushrooms with bacon ranch dressing. I know the salad will be good, but I'm a little worried about my little shepherd's pie thingy. It does smell good though! I will let you know how it turns out! One thing is for sure, if you didn't know how to cook before Atkin's, you do now!.

    But for the record, I did know how to cook before.....I mean, you know... I'm just sayin....

    I had simple baked chicken legs with the skin of course! Seasoned them with lemon pepper and garlic salt. Zucchini sauteed with butter and olive oil. It wasn't a fancy dinner night.

      I had uhmmm.. some taco flavored chicken with some cheese, and then some turkey slices.. and am having cream cheese and splenda for dessert (I'm really low maintenance).

        I had taco salad, and since I was worried about not eating enough calories today (I was only at 800) I also had a nice little almond flax muffin with peanut butter/cream cheese frosting. YUM! I'm also chugging the water...

          I had salmon, steamed green beans, and i made a mockafoni dish from lindas website.
