  • Question about Pumpkin

    I looked on the recipe board, but couldn't find any pumpkin recipes. Some of you have been talking about having it with cream cheese and what not. Just wondering if you could share with me what it is exactly that you're having. Canned pumpkin, I'm assuming? I just looked at my can of Libby's pumpkin mix and it has 11 carbs per half a cup and 3 (or four, I looked at it ten minutes ago and don't feel like getting up to double check. How's that for laziness! lol) dietary fiber and 4 sugar carbs.

    Let me in on the secret! Loooove pumpkin flavored anything.

    That must be pumpkin pie filling - what I use is Libby's too but it is 100% pure pumpkin (actually says that on the front of the can) - ingredients list says pumpkin and nothing else. Hope this helps!

      I mix a can of pumkin with a block of cream cheese, about a tablespoon of splenda and lits of pumkin pie spice. I whip it with my mixer and eat when chilled. Keep in mind this makes about 8 servings.
      You can also make a pumkin pie just follow the recipe on the can changing the sugar to splenda, the evap milk to heavy cream and no crust, or if you are in OWL you can make a nut crust.

        I do 1 serving pumpkin, 1oz (or maybe it's 2?!) cream cheese, 1 egg, 2 pkt of splenda, maybe some pumpkin pie spices, nuke until cooked...

          You could make pumpkin soup. I saw a recipe on another board (and I think its on Linda's site as well) for pumpkin sausage soup. So good!

            I adore Pumpkin Cheesecake. Here's the recipe I use:

            PUMPKIN CHEESECAKE

            16 ounces cream cheese, softened
            19 drops liquid splenda
            1/4 cup Erythritol
            16 ounces canned pumpkin
            3/4 cup sour cream
            2 teaspoons vanilla extract
            1/2 teaspoon cinnamon
            1/2 teaspoon nutmeg
            1/2 teaspoon ginger
            1/4 teaspoon salt
            4 large eggs, room temp

            Blend cream cheese with sugar substitutes until creamy. Add the rest of the ingredients except the eggs. Mix together well. Add eggs, one at a time until just blended. Pour into prepared springform pan. Put a separate pan of water on the bottom rack of oven to reduce cracking. Bake at 250 for 1 hour + 15 mins. Open oven door for one minute. Turn oven off and leave cheesecake in with door closed for one hour. Cool completely. Refrigerate overnight. Makes 8 generous servings with 6 net carbs and 305 calories each.

              I've made pumpkin cheesecake and pumpkin pie but for right now, I am buying canned pumpkin and adding pumpkin pie spice and one packet of Splenda and nuking it until warm. It's so close to pumpkin pie and SOOOO easy.I think fitday has been telling me 9 grams in a half cup with 4 of them fiber or something like that. I have a third of a cup if I can't afford that.
