  • combo deal - WWDF and check in time!

    I didnt see a check in and I love to find out what others are having.. so I figured I'd do it all at once...

    Yesterday was not a good day.. last night REFLUX. ugh...

    Other than that... doing okay!

    Dinner today:

    I'm thinking a stirfry. The family had mexican corn bread... I skipped supper. Felt icky.

    I have *NO IDEA* what I'm eating tonight... maybe I'll pickup one of the pre-cooked breasts or something.. blah.

      I'm hoping for grilled chicken tonight...but I've been hoping all week and I see what good that did me. If I were a master griller, I'd do it myself, but I'm playing damsel in distress and waiting for my boyfriend to grill the chicken.

      If chicken is a no-go, I think I'll have a chef salad.

        I'm going to have green beans ith bacon. Don't know yet how to prepare them, but I'll find out!

          Breakfast:
          Scrambled eggs and sausage.

          Lunch: I'm really low on groceries right now so I am resorting to the ole standby:
          Hot dogs with cheese
          green salad
          leftover red pepper and cream cheese boats
          2 oz home made sugar free cinnamon ice cream

          Snack:
          Red Peppers and cream cheese leftover from lunch

          Dinner:
          Italian sausage and peppers (yes, I bought a HUGE bag of peppers from Costco so I am trying to use them up!) with mozarella cheese.

          I don't know what I will be buying for this weekend's cookfest. Usually on Sunday afternoon, I take a couple of hours and make a gang of food and snacks ahead of time. Keep in mind, my boyfriend low carbs as well, so I simply MUST make food for us to get us both through the week. This weekend I will make

          A vat Chicken and/or tuna salad
          Deviled eggs
          pinwheels
          that pumpkin cream cheese thing
          Lemon Poppy seed "cookies"
          chopped steak for salad toppings
          home made ice cream (I section it out into tiny tupperwares for a little dessert treat)
          Spaghetti squash with broccoli and chicken and alfredo sauce
          Plenty more red pepper and cream cheese balls
          cubed gouda
          parmesean cheese chips

          Thankfully I have a great boyfriend who hunkers down with me in the kitchen and helps with everything, so it goes much easier. But you know what bugs me? He only needs/wants to lose 20 lbs (he's 6'1" and about 210. most of it muscle girth) and I have to lose nearly 50 lbs! He works out A LOT and has for a long time now but he loves to have his beer and scotch so he has to low carb to maintain his weight. But you know I'll be gangbusters low carbing until I can go into maintenance, he'll be in maintenance in no time. And I don't even want him to lose weight! It's funny becuase he didn't really know what this ADBB was all about, why I am on it a lot, checking posts every chance I get. I tell him that I need other people who are like me. You know, NOT delusional about the fact they need to lose weight, but people who actually have the same kind of battle ahead of them that I do. He understands now. But how lucky guys are, they drop weight so much faster! Oh well, just a gripe really.

            I did ok yesterday with everything. I don't think I have lost any weight yet this week. But that happened last time after the first two weeks....

            I want to eat up that left-over meatloaf (yes, I STILL have more to eat up!) and maybe I will let DH make himself a sandwich.

            Pigs - I need to do like you and do some cooking this weekend. I think it's great that you come on here and talk to people that you feel like you have more in common with! It's nice to find people who need to lose similar amounts of weight.

              I had Spinach Quiche for breakfast.

              I'm having the Korean chicken recipe from Linda's site for lunch. I think I'll also try some raw jicama...for the first time.

              I'm thinking of Italian meatballs with spaghetti sauce if I can find a good low-carb recipe for that.

              Today must be my day to experiment with all new recipes...

                I do like jicama - I had that when I lived in Mexico.

                I did try the Chayote yesterday - hmmm, it was ok. I did it with Splenda and cinnamon. It has the texture of an apple, definitely. But it didn't taste too much like an apple to me.

                  At our house we actually fry some bacon with onion in a pan so some of the fat is rendered. Then we add the beans (canned) and cook until almost all of the juice is gone. Takes about an hour, but you will be pleasantly suprised how delicious they are.

                    lunch - lc philly cheesesteak

                    dinner - chicken tortilla soup ( without the tortillas of course )

                    snack - garlic stuffed green olives and cheese.

                      yessss... we dont eat it any other way! Enjoy!

                      Chayote ... make sure you cook it long enough. I didn't the other night and hmm.. well.. ick. I have one more.. gonna eat it this weekend

                      Jicama.. MMMM really great fried!! It tastes like a wimpy french fry.. but man they are good! Salted.. peppered.. dipped in low carb ketchup. MMMM I'll have to get me one this weekend LOL

                      I bought an eggplant because it was on sale (I Know!) but I couldn't resist and it has been awhile since I had one... I'm thinking parmesan cheese on top.. with italian seasonings.. baked... dipped in spag. sauce... or sauce on it before baking.. MMMM Will make a great snack! Now, if I can resist eating the entire thing. I bought a small one.. just to be on the safe side!

                          Breakfast will be coffee and some eggs on revolution bread.

                          No snack as breakfast is at 11 a.m (it is Sat here. great day for a sleep in)

                          Lunch left over italian meatballs and sauce. small salad

                          dinner will be something with chicken thighs (haven't decided yet what to do with them), broccoli, cole slaw and SF Jello with cream for dessert.

                          Snacks during the day will probably be pate` in celery stalks
