    Hi, I don't usually post here but....

    Hubby is coming home tonight from a business trip, I'm making:

    A big fat juicy ribeye
    green beans sauteed with bacon and a little diced onion
    Iceburg lettuce wedges with blue cheese dressing.

    I can't wait!

          Aww drats! Isn't that the worst? I hate it when Dave is gone and I REALLY hate it if he doesn't get back when expected. I still hope that you enjoy your dinner - I might have to make the same thing!

          I do have some chicken breasts that I need to use though...but I find chicken breasts so BORING most of the time no matter what I try to make with them!

            Me too with the chicken breasts Kylie. I have a hard time making them and actually wanting to eat them. I think I'm disabled when it comes to cooking chicken.

              I'm having taco salad tonight YUMMMMMMM! My boyfriend will be having "regular" tacos.

              Hmm...as for chicken ideas...are you a white meat or dark meat fan? For dark meat, you could slow cook it, add chipotle sauce, jalapenos, tomatoes, etc. (for a Mexican taste) or add lc ketchup, worcestershire, splenda, cayenne pepper, for "pulled" chicken...like BBQ meat.

              For breast meat, I love to grill it, then coat it with hot sauce and butter. I also cube chicken and put it in stir-frys, or cook it in oil, add garlic, shallot, broccoli until cooked. Top with alfredo sauce and serve with spaghetti squash. YUMMY!

                ooooh! Stir-fry - I always forget about that - probably because Wilson won't eat it, so I have to keep his stuff all separate and it's a pain! LOL! We have that a lot when he is scheduled to be elsewhere for dinner and we usually stir fry with shrimp...but duh! chicken would be a nice change.

                  I was going to say for chicken breast--do the green enchilada chicken on Linda's Low Carb. It's WONDERFUL.

                    Okay, now this recipe isn't induction friendly, but I find I can eat it and it doesn't affect my ketosis. This is an amazing way to have chicken!

                    Cut up your chicken breast into bite-sized pieces or strips
                    marinate in 1 part salsa and 1 part italian dressing. I usually do a cup of each for about 3 or 4 breasts.
                    cook in skillet covered on medium high heat until liquid is reduced (i like to burn it a little, too). Uncover the last few minutes (it sort of pops everywhere, so turn the heat down a bit during this process)

                    place warm chicken pieces over green salad of choice, add cheddar cheese immediately on top and avocadoes and sour cream. Sometimes i add a little blue cheese or ranch. It's so tangy and delish--yum!
