  • This may be a stupid question.......

    ..but on induction, when you can't stomach another lettuce salad, what can you substitute in place of it? Do you settle for just one cup of the Other allowed vegetables? Or two to three cups of say... celery, cucumbers, or radishes?

    I ran out of lettuce last night, and all I had available was celery. Two cups of celery just didn't seem appetizing to me. Any advice would be greatly appreciated. Thanks.

    Green peppers. Now I"m not sure if I did it right, but I'd get a double burger, no bun for instance. Bring it back to the office. One beef patty I would take and wrap a romaine leaf or "stalk" around and eat it. The other, I'd crumble up into a green pepper halve.

    Then I'd just eat the other half as well.

      Salad vegetables do NOT mean just "salad". There are many veggies on the list that I eat as snacks that I don't consider part of a salad. Jicama, bell peppers, jalapenos, daikon are just a few of the salad veggies. Check out DANDR or the stickies for a full list of the salad veggies. These various salad veggies will give you more nutrients, vitamins, and fiber than an lettuce salad, as lettuce (especially iceberg) is mostly water and devoid of nutrients.

        WarOnType, peppers are good, but Juli, never even heard of daikan, or jicama, and I'm not sure I've even seen them in the grocery. Now Jalapenos are off limits for my stomach, and my mouth.

        I'll have to scout out the jicama I've heard so much about here on the boards. Thanks.

          Don't know what your missing! I had my first JICAMA the other night. Gooood stuff!! I had some raw and I had some cooked liked hash browns. Pretty dang good!

            Yes, Jicama is great! You gotta try it. They look like a cross between a potato and a big onion. I make them in a few ways.

            - Chpped and cooked like hash browns
            - sliced thin and fried like potato chips
            - raw (kind of tastes a little like apple)

            Give it a try! The only warning is that if you cook it, it doesn't crisp up like a potato would unless you cook it very long.

                  Ohmygod. There's a thread with jicama mentioned, but Joy hasn't been here!!

                  I use spinach instead of lettuce, I'm a classic salad type of girl, though. It provides more nutrients and I think it tastes better. There are also like, the spring mix salads. Then there's the whole jicama thing, which I *do* love to have sliced up.... ummm.. chayote squash is yummy too, but I can't find which list it would be on, so maybe it's not...?

                        The only reason I remember that is because jicama is so similar to it, but much cooler because it's a salad veggie--you can eat more of it in a day! Oh and it helps that DANDR is tatooed on my butt...

                          You can slice up a cucumber and either dip it in Ranch dressing, or dab some cream cheese on top.
                          Slice or cube up a tomato with a dash of salt, and eat with a fork.
                          Canned pumpkin (NOT pumpkin pie filling) is good with some Splenda and cinnamon. Tastes like pumpkin pie without the crust, and high in fiber.

                              I've browned ground beef with spices to make it taste tacoish and used romaine leaves as wraps, put the beef inside and topped with cheese and sour cream. Yummy to me
