Ok I bought a Jicama, now what do I do with it?

  • Ok I bought a Jicama, now what do I do with it?

    And is it safe for Rung 1? It says it's a tuber?! Anyhow, the checker at Target said "may I ask, what do you do with these" and I laughed and said "I have no idea"

    So what can I do with this sucker? I'm trying to branch out of my salad and green beans box.

    It's safe for induction even!! I'm sure Joy (ValidRouge) will be along shortly with all kinds of ideas, but I peel them, slice them up and use as a substitute for chips. They're great plain, or with anything on them!! There are recipes around for jicama salad, or you can slice some and add on top of your salad for crunchiness.

        Jicama - hmm asked my Fruit and Veg supplier at work to get me some - he had never heard of it! does it go by another name in the uk?

            LOL! I thought the same thing. My sister took one look at it and shook her head. Thought it looked like some over-sized potato.

            It's 2.5 NC per 1/2 cup.

              I cup raw sliced (120 grams) has about 4.7 net carbs.

              Low Carb Uses: Like potatoes, jicamas can be steamed, baked, boiled, mashed or fried. Unlike potatoes, however, they can also be eaten raw. Sliced into wide sticks, jicama makes a crunchy carrier for guacamole and highly seasoned dips.

              I usually just eat it raw, but if you google search jicama, low carb recipes you will find a ton of them.

                I knew I had this somewhere, its from the show, low carb and lovin it:

                Jicama Matchstick Fries

                3 to 6 cups vegetable oil (more or less depending on pot size)
                1 medium jicama, peeled
                Salt
                Onion powder
                Garlic powder
                Paprika
                Place a heavy pot over medium-high heat and fill with at least 1-inch vegetable oil. Heat the oil to 350 degrees F. (Portable deep-fryers at home are great for this, but if you don’t have one, use a candy thermometer – just be careful!)

                Very thinly slice the jicama, as you would a potato to make chips, then stack a few slices at a time and cut them all into matchstick-sized pieces.

                Carefully place the chips into the hot oil (use a slotted spoon and wear mitts) and fry until very crispy (just a few minutes will do). Cook in batches, as necessary. Remove and drain on paper towels.

                Sprinkle liberally with equal amounts of salt, onion, and garlic powders, and paprika to taste. Toss to coat well and serve immediately.

                ETA- I have made these before and they were very good.

                    I love making jicama home fries. I shred the jicama and an onion add butter and garlic powder (or garlic salt) and bake it in the oven for 30 minutes. YUMMMY!

                    Another one is to make "mock" oatmeal. You chop the jicama and boil it (I forget how long, but I think I boiled off 1 pot of water and then added the equivalent of another and boiled off 1/2 of it) then add butter and a packet of sugar free apple cider powder then run the whole thing thru the food processor. Comes out tasting like apple flavored oatmeal.

                    You can use jicama in any place you might use water chestnuts (like in any asian stir fry) as well.
