    Okay, so, Skinnymom, I'm either going to have to blame you or thank you for starting this post...LOL...

    The 2nd batch I made last night...gone. Dh decided to make a late night "sandwich" with some. DD11 decided she'd try a couple before school, of which left me with 4 pieces. I had two slices with an egg muffin in the middle before school, and had the last 2 just moments ago for a tuna "sandwich".

    My point? I'm totally hooked and now need to make a bigger batch this evening before we head out camping tomorrow.

    I must say, I've really taken a liken to the parchment paper...so much easier than wax any day!

    Thanks for the encouragement, information, recipes, and everyone sharing their thoughts!

      Yup, parchment paper is my all time favorite tool in the kitchen i do everything on it. Chicken wings, so they don't stick to the foil and you end up missing a piece and eating foil, and I do all of my cookies, cakes and rolls on it. It saves clean up and all of your stuff comes out perfectly browned and slides right off. I even line my cheesecake pans with it at the bottom so it slides on to my cake pedestal for decoration purposes. Beeeaaauuuuttttiiiiiffffuuullll! Can't live without it.

      As for a non reactive bowl, I have an old copper bowl that my greatgrandmother used and I like it, but it is only what I use when whisking by hand with a wire whisk, (no mixer) but I find the best loft all the time when I use plastic. It just works the best. Not fancy and everyone has one. Glas bowls just don't cut it for me. I was a professional cake decorator and baker before atkins (I quit because it was counterproductive to my health and goals) and am finally getting back in to making things that are atkins friendly.

      I knew there was cream of tartar in the recipe, but if loft is a problem and extra 1/4 tsp would help. And just leave your eggs out for a bit to get them to room temp before whisking if possible. It helps.

      Trying them tonight! I'll post my results when they are done......

        I added the extra C of T, and that seemed to work much better. The 3rd batch were big and fluffy right out of the oven Thanks for that suggestion. I also used my glass bowl...I don't have plastic bowls big enough to mix stuff in, since most are square, storage containers But, that just gives me one more excuse to shop for some

          I just like the results i have with plastic. IMO they rock.... tupperware. Who knew?

            Thanks for bringing these to my attention. They look yummy, I had shied away from trying the rolls because I tried them once when I did Atkins before (about 20 years ago, lol) and didn't like them at all. But that recipe called for cottage cheese, I am thinking the cream cheese will be much better!

            So I have my cream cheese softening, eggs on the counter and nagging the dh to go to the store to get me some cream of tartar.

              I just took them out of the oven and they look beautiful! Although I think I should have made them a little wider and less tall. I think they may fall a bit, but we will see. I used 1/4 of a cream of tartar instead of the 1/8. I didn't make the danish yet, rolls first, fancy stuff later, lol.

                OK, I tried to make the danishes... total disaster. I ended up with something like pancake batter. It just spread out and filled the whole pan. So, I read through all of your posts and tried again. I made the regular rolls and they turned out beautiful! I haven't tasted them yet, though, I think I will have one with dinner. I might make the danishes again tonight now that I know what I am doing a little more...

                  My first batch was about the same, pancake like...but I cooked them anyways and let the oven do it's magic. They still came out and I was able to make "sandwiches" a little differently. I think using the plastic bowls might work better for me next time...mine were really fluffy and not so wide, too.



                  Okay, I'm on the fence...to make more or wait until next weekend. LOL...it's that bad! Rather, I mean, it's that bad that I'm totally addicted to these wonderful little creations. Maybe it's the fact that I found something I can actually bake! LOL.

                  Side note....


                  IF you're going to go camping, on a picnic, going to Grandma's, family reunion, there's no reason why you can't make these precious gems to take with you so you can have "sandwiches" or treats. Trust me!

                  I made it through a camping trip without feeling like I was "missing out" because, well, I wasn't.

                  Here's what I made with these great little delish treats....

                  Egg sandwich breakfast...eggs, bacon, and cheese between two pieces
                  Tuna sandwich lunch...tuna, lettuce, tomato
                  Hot dog dinner...Oh, yes! I had a hot dog between two; had to cut the dog in 2, though.

                  I know I've said it before, but THANK YOU!

                    Mine turned out picture perfect. Love em! Thanks skinnymom! These are deffinately going to be hot roast beef sandwich with gravy, or steak sandwich, and deffinately deli meat or tuna salad worthy, or even breakfast sandwich with sausage and omlet and home made heinz ketchup! And did I mention that they are versitile? LOL

                        I made the chesses danishes last night, and forgot to add the splenda and vanilla to the second half of the cream cheese...lol


                        They are still good...reminds me of a piece of toast w/ cream cheese...

                          I had one yesterday w/ Boar's head turkey and mustard and it was great. Although I'd like to get them a bit more...sturdy. I am wondering if adding maybe a tablespoon of flaxmeal might help..or perhaps whey protein... I will experiment on the next batch.

                            Made both the regular bread ones and the cheese ones. Could not believe the cheese ones were low carb, will be eating these alot for breakfast.

                              I made the cheese ones and they came out great, then went to make the regular ones and my egg whites would not think up, tossed them and grabbed three more eggs, those came out great.

                              Not all eggs are alike I guess, (all from same carton) think you have to make sure the egg whites are as stiff as you can get.
