ok, i've been doing Atkins on and off for years now. NEVER ONCE, have i EVER seen nitrateless bacon. where are you people getting this stuff?

I get mine at Harris Teeter - they have a few brands actually. I thought it tasted pretty much the same, but it is expensive. However nitrates really scare me, so it's worth it.....SLIM IN 6!

Hey Dan, just try and find the bacon without added sugar and as you said, use it sparingly. I probably use more bacon in the summer, I smoke alot of meat, and love to smoke jalapeno's stuffed with cream cheese wrapped in bacon.
You should be fine man. I believe it mentions in the book about bacon being okay just being careful of nitrates and such.

You can also try your local butcher. They can tell you what is in the bacon and it is usually less pricey as the packaged brands. There is one brand that is awsome, but may be regional so I dont know if its available where you are. Its Niman Schell, and if you have a Trader Joes they sell it there for much less than other stores.

I just came from wal-mart and they carry Hormel natural choice bacon...no nitrates...they also make roast beef, ham, and turkey lunch meats with no nitrates. So just call some local stores and ask if they carry them.

I've never found bacon that has no nirtates and no sugar. It's always one or the other. I have been using Gwaltney Bacon with no sugar added. It does have nitrates, but it only costs me $2.59 and it is very delicious. And, I only eat it sparingly, so if I have to make a choice between the nitrates and sugar, I choose the sugar-free bacon.
I see a lot of people are using the "Natural Choice" products that have no nitrates, but it does have sugar in it. (check for stuff like evaporated cane juice in the ingredients - that's sugar).
