    Since you asked here are the Shrimp, Bacon & Cheddar Stuffed Bella's. I barely had time to take the picture before they disappeared.

      Hey, Di...

      What kind of shrimp do you use in these? I mean, do you use fresh or canned?

        Hi Mitzi,

        I used cooked frozen shrimp, but you could use any kind.

        I don't really use recipe's, although I weigh everything with carbs in it, to keep count of them, but in general this is what I did:

        Took 10 medium smallish portabellas, removed stem, chop and reserve. Scrape out gills. You don't have to do that, but it does leave more room for the stuffing.

        I took about 18 or ounces of shrimp, peeled, deveined and tail off, chopped them up, added about 1 slice of cooked bacon per shroom (chopped/crumbled), then added about 1 cup of cheese, I used 1/2 cheddar, 1/2 mozzarella, because that's what I had on had. Brie or guyre would be nice as well. Set that aside.

        Whipped 3 eggs til frothy, add between 1/3 and 1/2 cup crushed pork rinds. Add whatever spices you want to the egg/pork rinds. While that is soaking chop up some green/red/yellow peppers, whatever you have about 2 handfuls, 1/2 of a medium onion chopped, the reserve shroom stems, chopped. Saute the veggies in olive oil for about 3 minutes, until crisp tenderish.

        Combine the shrimp/bacon/cheese mix with the sauteed veggies, then add the egg/pork rind/spices goop...err...mixture. Stir it all up and stuff mushrooms. Bake at 350 for about 20 minutes, top with more cheese and put back in oven for about 3 minutes to melt the cheese topping.

        In general, you can stuff portabellas with just about anything, the only thing I really do consistantly is the egg/crushed pork rind/spices mix, that binds it all together and keeps the stuffing from spilling out of the shrooms while baking. I just eyeball the amount of stuffing I think I'll need and if it looks like not enough, I just chop up a few more veggies or throw some more of whatever meat I am using.

        They came out to be 5.2 carbs per shroom, mostly from the shroom.
