Yup, they're just plain old shirtake noodles. They're made by lots of different companies, and you can buy them at asian markets. They're made from yam flour, or glucomannan, and they're basically 100% fiber. They're chewy and take on whatever flavors you put with them. I have made them like spaghetti and I loved them!
Make sure that you boil them first--they won't "cook down", it's just to get rid of the fishy/squid-y odor that they have. Don't ask me why them smell like that...and I guess I'd rather not know.

I've tried them a few times and I'm still a bit iffy. But I haven't completely given up on them. You will find that they never really soften so they're kind of like really really ad dente pasta. Some people love it. Canadians can get it from the Low Carb Grocery store in Toronto. They ship all over Canada. Their link is www.thelowcarbgrocery.com. They have tons of low carb stuff.

They have a strange taste. You have to wash them really really well, and flavor them with sauce or something, because their natural flavor isn't that great.
You'll probably find them at an asian market. My husband LOVES them, just because he's happy to have some sort of noodle.
