  • Here is Sandy's Broccoli Salad recipe she gave me......

    I've found you can add, change, take away, to your own taste....matters not....this stuff ROCKS! The only thing I really changed was the amount of Splenda from a 1/2 cup to 1/4 cup. But here goes....enjoy....Thank you Sandy!!! (Oh yes I quickly blanched the broccoli...boiled for 2 minutes and shocked it in ice water...kept it crunchy and soft together...) personal choice! It's good both ways!

    SANDYL2002 Broccoli Salad

    Wash 2 heads of broccoli, cut off stems (the smaller the flowerettes the better)

    I add a handful of sunflower seeds, bacon broken into little pieces, and chopped red onion.

    Dressing:

    1 cup of Mayo

    3 Tablespoons of Apple Cider Vinegar (not sure if that is low carb or not but you can use white vinegar)

    1/2 cup of Splenda (I cut this to ¼ cup myelf….Scooter)

    Pour dressing over broccoli and mix it all up. Refrigerate.

    Linda's site has measurements.. I am a throw it in the pot girl...lol This Salad is MUCH MUCH better fixed the day before something.. It softens the broccoli up sitting overnight. Just make sure you stir it up the next day.

    Chopped up waterchestnuts are good in this, too. And IF Atkins allows it somewhere on the rungs, raisins really add to this, too.

    I made this last night for a cookout tonight. CAN'T WAIT!

      Thank You!! I've been driving myself crazy over this recipe since last weekend! You have no idea...

      Going my memory, I prepared and brought it to a family dinner, but I knew there was something missing from my dressing... VINEGAR! No wonder it seemed so thick!

      Okay, I've scheduled my next attmept for Sunday. After my trip to the produce stand. Bless you Scooter, you're a lifesaver!

        I don't blanche. I never seem to have sunflower seeds and I don't want onion breath. I add chopped red pepper and shredded sharp cheddar. Yummy! It's very adaptable! Now about the Splenda, does it matter if you use the granulated kind or the packets. I always thought the packets had less filler and was better. Has that changed?

          I like mine with brocolli, cauliflower, tomato, cheese, and green olives. And the dressing of course. Weird?

            I don't use any splenda. I use 2 packets of stevia (more natural subst). I mix the stevia in with the mayo and vinegar. That way you don't use so much sugar subst.

            This is so awesome.

            I think some cut up jicama would be good too!
