  • so what's the verdict on coconut oil?

    i've been hearing a lot of buzz about coconut oil. from what i've read it seems like a great thing to incorporate into my eating lifestyle. but does it live up?
    Starting Weight: 190 (2005)
    Goal Weight: 140 (met goal summer 06)
    Current Weight: refuse to get on the scale but all my clothes don't fit
    New Goal Weight: 135

    I've been using coconut oil for a while now. They say that combined with a low carb diet it could help you lose more. I don't remember anything else about it. I don't know if it's been helping me but I just enjoy the taste. It's a change from olive oil. And it smells heavenly. Just like a coconut.

      I use coconut oil. My favorite use right now is to make a chocolate bar, I think some people call it "bark". I modified the original recipe I saw to be 3 tablespoons coconut oil, 1 tablespoon heavy cream, 2 tablespoons cocoa powder, and sweeten it to taste. If you're off induction you could throw almonds in it too.

      I have a rectangular container I use for a mold, throw it in the freezer and nibble at it as needed. I've yet to feel like I need to eat the whole thing at once. I find it to be very satisfying in small doses. I was thinking I might start using chocolate molds for smaller bite sized pieces.

          Well, I used to be able to get it at the grocery store with the East Indian food (Superstore). However, I was shopping earlier this week and they didn't have it anymore (or maybe they were just out), but I know you can get it at health food stores. You can actually get virgin coconut oil there which is suppose to be better anyway.

          It's usually solid at room temperature (unless it's really hot out) so you would need to melt it in the microwave to make it a liquid again.

            i found it at whole foods. my new favorite way to incorporate it is in a protein shake. i found these awesome green foods and whey shakes, i throw it in the blender with water, ice, and a dash of coconut oil. yum!

              Found it at Whole Foods. Bought it.

              Tried it.

              Verdict: YUMMY! A real change. I'm going to make the famous cinnamon and splenda jicama this weekend and I would bet a million dollars that coconut oil will add some definate flavor!
