  • I'm back after 2 years!

    Well, here we go again. I originally started Atkins January 30, 2005 and quit around 3 months and 20 pounds later.

    The reason I quit back then was because I got very bored with my food. I am a veggie hater. I only like the veggies I cannot eat! Potates, corn, peas, carrot...The only one that I can eat is lettuce and maybe a little bit of fried onion (if it is fried to a crisp)

    I am afraid that I will get back into the same boring routine. I have read through a lot of the side and veggie dish recipes here and not a lot sound appealing to me. It's not that I haven't tried! I've cooked spinach, spaghetti squash, mock-cauli fried rice, broccoli and I try it with a positive attitude, but the taste just turns my stomach so bad that I either have to stop eating it or I will throw up! I really wish I liked veggies but I don't

    I have no problem with the main part of the meal. I like chicken, beef, turkey, fish and eggs.

    Is there anyone here who is a picky eater like me? If so, what do you do to substitute your veggies. Can you drink V-8 (which I do like)?

    No V8. I really hated veggies (except the ones listed as being off-limits) when I started too. I ignored them for a *looong* time, even while following everything else. They shouldn't be ignored. There are actually some really great recipes that involve veggies... Linda's Low Carb site has some (Spinach Lasagna, Faux Fried Rice), Low Carb Luxury has some (Peppery Turnip Fries, Cheesey Cauliflower) and you can always try some new ones (Jicama is great as a substitute for chips, tomatoes can go into tuna melts).

    My fave breakfast:

    1 serving pureed pumpkin (not pie mix)
    1-2oz cream cheese (slightly melted so it'll mix)
    1 egg
    1-2pkts splenda or davinci syrup

    Mix it all together in a bowl, then microwave for a couple minutes until firm. It's really yummy.

      That sounds delicious! I cannot find Davinci syrup in my area (eastern Canada) and I have searched several supermarkets and none of them have jicama I wonder if I can buy the Davinci syrup online?

      I will try to find the tuna melt recipe (I have only ever had tuna on a sandwich or in salad).

      My mom just gave me some rhubarb she cut in her garden. I will have to search to see how you can eat this stuff. Can you tell I'm hopeless in the kitchen?

        No, you can't substitute V-8 because it is full of tomato and carrot juice.

        You could try:

        1. Hiding veggies in your food. Make a meatloaf and add pureed veggies; I promise you won't know it's in there.

        2. Eating a huge salad every day. If you can tolerate lettuce, do the lettuce.

        3. Making it all about stew. In the stew, besides the meat, add acceptable veggies.

        4. Grating veggies and making pancakes or fritatas with them: basically, take zuchini or squash or almost any veggie, grind them up, add an egg, some ginger, some cinnamon, and a bit of splenda, and fry until crisp in olive oil. Top with a dash of sour cream if you like. Think of them as potato pancakes without the potato.

              anyway, yeah, im a veggie hater too, but you can fry your veggies in butter, smother them in cheese! they do taste pretty good!!

                I was like you, hated veggies, but for some reason, now i LOVE them. Especially steamed brocolli with butter. red and green pepper strips are great also. last night i made cauliflower in the oven roated for 1 hr on 350. It was so tender when it came out, i mashed it up with garlic salt and butter and i swear to you it was better than mashed potatoes. Also try spinach leaves instead of lettuce for salads.

                    This one I just tried and is very similar to Michelle's only before I put the cauliflower in the oven to bake I spread it with some mayo and then put shredded extra sharp cheddar on it. It is AMAZING.

                      I'm from Canada too and can't find DaVinci syrups...but I found the exact same thing just a different brand name. They are called Torani sugar free syrups. I'm sure you will be able to find them out east as well.
