  • Birthday Blues

    My b-day is coming up next month. I'd love to be able to enjoy some sort of treat at the end of the day with my family.

    Any ideas on low carb treats I could enjoy without creating a binge attack?


    Last year my husband and kids lit a candle for me and sang Happy Birthday. It was adorable but how I missed the cake under the candle. lol

        yes cheesecake sounds good...maybe you could make a lowcarb strawberry sauce somehow...or even just topped with strawberries...and maybe some sugar free chocolate syrup...lol i'm getting hungry now...

              I found this on Sheila's:

              Sheila's Quick Pumpkin Mini-Cheesecakes

              Makes 4 cheesecakes
              (If during Induction, use Splenda
              packets rather than granular - less carbs!)
              7½ net effective carbs per cheesecake
              Copyright © 2002

              1½ cup pumpkin
              1 cup cream cheese
              4 eggs
              2 T butter, melted
              1 cup Splenda
              1 T cinnamon (or more!)
              1 T vanilla
              1 tsp. almond extract
              ½ tsp. lemon extract
              1 tsp. chocolate extract (optional)
              1 tsp. salt
              Blend ingredients & pour into 4 disposable aluminum pie shells.
              375º for 25-30 minutes.


              The only thing is---what size aluminum pie shells do I use? The mini ones I'm guessing, right?
