I take 1/2 a can of pumpkin (comes out to .88 cups) and put it into a bowl along with 2 ounces of cream cheese. I microwave this for about 50 seconds. I take it out of the microwave, stir it up really good, and add a few drops of liquid splenda, 2 teaspoons of cinnamon, 2 teaspoons of allspice, and 1 ounce of natural almonds (roughly 22 almonds that I cut in half so I can have 44 nuts
). I stir again, and put it back into the microwave for 45 seconds. Stir again, and it is ready to eat. To me, the warmer it is, the better it tastes. Beware, this concoction contains 15 net carbs. I don't mind spending that many carbs for breakfast since I have been eating up to 40 net carbs daily. And I am always looking for ways to get fiber in, and this breakfast supplies me with 15 grams of fiber... yeah! You can omit the nuts if you haven't gotten to Rung 3 yet and/or can cut back on amounts of the ingredients if you need to make it lower carb.
When I go back to Rung 1 on Sunday, the 19th, for the last two weeks of the Labor Day Challenge, not having nuts in my pumpkin is going to make me sad
... they go so good with it. But h*ll, I can go 2 weeks without them. I ate the pumpkin stuff for months without the nuts before Rung 3, and I can do it again. (temporarily!

Pumpkin omelet
2 eggs
1/4 cup canned or fresh cooked pureed pumpkin
1/2 tsp vanilla extract
1/4 tsp maple extract
1/2 tsp fresh ground cinnamon
pinch of ground ginger
1 tbl (give or take) DaVinci Caramel syrup
1 oz cream cheese cut into tiny cubes
beat the eggs, pumpkin, vanilla, cinnamon, caramel syrup well together pour into a preheated over med high skillet with a pat of butter in it cook until almost done and ready to flip ... add the cubes of cream cheese and fold it over with a very easy hand....cover and remove let stand until the inside is completely firm....

Interesting! I hadn't though about using cream cheese.
I have always made crustless pumpkin pie, using a dash of cream and egg and spices and splenda, then baking it until firm. Absolutely yummy, but I can get tired of it, and your ideas sound like they might be great. I would omit the nuts, of course, since I'm still in induction.
