  • Zippy New Recipe Thread

    Ok, all, this is a space for us to post new and interesting recipes that others can try. Not links to other recipes, but actual recipes.

    CRUSTLESS QUICHE VARIETIES

    The basic recipe for a crustless quiche at my house is: 4 eggs, 1 cup of heavy cream, and 1 cup of cheese. Bake at 350 F until firm in a round baking dish. The varieties are endless.

    Southwest style: use monterey jack and cheddar cheese. Add 1 can of diced green chiles, 1 cup of chopped cooked turkey or chicken that has been mixed with an envelope of taco seasoning.

    Ping pong pie: Use cheddar. Add 1/2 of a red onion, sliced, 1 can of sliced water chestnuts, a dash of garlic salt.

    Italian style: use 1/2 cup of mozzarella and 1/2 cup of shredded parmesan. Add 1/2 cup of diced tomatoes (fresh or canned), 1/2 cup of diced zuchini, and 1/2 cup of sliced mushrooms.
    Start date: 7/29/2007

    Tape Measure: I've lost 42.5 inches as of 3/15/2008

    Mini goals:

    205 - met 10/17/07
    195 - met 2/20/08

    Zuchini fritters

    You can make this two ways: with the splenda, using sour cream as the garnish, or without, using sour cream and a spoonful of salsa as the garnish. Both are good.

    2 zuchinis, any size, grated.
    1 egg, lightly beaten.
    1 tablespoon grated fresh ginger
    1 tablespoon splenda
    1 teaspoon vanilla flavoring
    dash nutmeg

    Mix all of the ingredients. Heat 3 tablespoons of olive oil in a frying pan. Drop spoonsful of the mixture into the oil, and fry on both sides until golden brown.

    Garnish with a dab of sour cream.

      My favorite Ranch chicken and veggies

      1 Zuchinni
      1 summer squash
      1 small onion
      1 small pepper
      2 boneless chicken breast cooked and cut to bite size
      Cheddar Chesse
      Ranch dressing
      Butter

      Fry in butter the veggies all sliced to your preference
      Cook till done ( the way you like em)
      Stir in the chicken till warmed
      Drain excess butter and stir in about 1/4 cup Ranch dressing
      Sprinkle with cheddar cheese

      This makes about 4 servings .........

        Ok, I'm coming over for dinner....gosh....I've been pulling back on foods and going thru a touch of withdrawl! Here you guys are really dolling up the yummies! I'm coming over!

          My crustless quiche recipe is similar but uses less cream.
          4 ounces grated cheese, spread over the bottom of the oiled dish (hold back one ounce to mix with filling.
          2-4 ounces of cooked grated cauliflower
          1 tablespoon of chopped chives or spring/green onions
          2 ounces or so of chopped cooked bacon or other meat
          Sprinkle these over the cheese 'base'

          Mix together 4 eggs, half a cup (4 fl ounces) of cream and the rest of the grated cheese and pour evenly over the dish.

          Bake at about 150 C/300 F for 30-40 minutes.

            Aubergine/Eggplant Bake

            Peel and cut in half one aubergine
            sprinkle with herbs/spices and lay cut side down in a glass dish and microwave for a few minutes till softish
            Remove from microwave and turn over with cut side facing up and add more spices if you like. sprinkle chopped cooked bacon bits over the top and put under grill or in hot oven for a few minutes.
            Remove and add slices of gouda or some grated cheese and put back under the grill till golden brown and melted.

            You can do it without the bacon if you like.

            I also do the same with sliced courgettes/zucchini

            Makes a great quick supper dish for me if I am in a hurry.

              Great thread, Evermind

              Can y'all believe that I still haven't tried zuchini yet? So far, spaghetti squash is really the only squash I've tried that I actually like. Yellow squash is OK, but not my favorite. And I did a really rotten job of grilling eggplant the one time that I tried it - it was gross. (I'm thinking perhaps I didn't cook it long enough) So I've been wary of trying others. Maybe it's the consistency of squashes that I don't like? I don't know. These recipes look really, really good... I'm going to have to take the plunge!

                Mitzi my favorite way to eat Zuchinni is layerd like Lasagne. Cut it in thin slices lengthwise like "noodles" and layer your meat cheese tomoto sauce, mushrooms onions ect ......... all the things you like and then bake it at 3:50 for about 40 minutes ........ makes a fabulous lasagne!

                  Very interesting, Heidi! I will have to try it.

                  Can you believe I still haven't used tomato sauce since my re-start? Been avoiding the carbs, I guess.

                          We took the kids to see Ratatouille and then while browsing the DANDR recipies section last night I found a recipie for it so we made it a family project today and cooked some up it was delicious so I thought I would add it here :

                          Here is the recipie:

                          1 eggplant 1 1/4 lbs approximately cubed to bite size
                          1 zuchinni cut to bite size
                          1 yellow squash cut to bite size
                          1 large tomoato cut to bite size
                          1 onion sliced thinly
                          1 red pepper chopped
                          1/3 cup Olive oil
                          2 tsp minced garlic
                          1 tsp salt
                          1/2 tsp pepper

                          * cut up eggplant toss in about 2 tsp salt and sit in drainer in the sink about 20 min rinse well and pat dry
                          * In a baking dish add Olive oil, garlic, salt and pepper and mix well
                          * cut up all veggies and toss in the pan coating with Olive Oil Mixture
                          * bake at 425 for 45 min
                          * stir once again and enjoy!

                          This is delicious as a side dish of veggies, can also be tossed with pasta, served with Keilbasa, or even served chilled. Also works wonderfully as a filling for Omeletes!

                              No problems - they are a goodlooking bunch! And it is great that you get them involved in cooking
