    I am in a recipe trying mood and did this one tonight.. I must say it was VERY YUMMY... Mixing that Ranch dressing in with the veggies and the chicken was soooooooooooo good... You could almost get by without adding the cheese on top too

      Sandy posted this morning about sugar-free jello being available, and it brought to mind one of my absolute favorite desserts for Atkins. Truly a couple of tablespoons is all I need.

      I use black cherry sugar-free jello, but it works with almost any flavor. Instead of using both hot and cold water, I just use the hot water (2 cups for a big box. I mix it in the blender, and put the blender in the fridge for about 1/2 hour until it's cool, but not set. It'll be thick, though.

      Then I take a block of cream cheese and put it in a bowl and nuke it for about 45 seconds, just until soft.

      I plop the cream cheese in the blender, and turn the blender on. I let it blend until frothy, for about 30 seconds, then pour it into a bowl and chill until set.

      It's smooth, creamy, and has enough fat in it that your cravings are instantly satisfied.

      Now that I am in the nuts rung, I may do it with lime jello and some crushed walnuts for texture.

        Sounds good.. I don't normally eat the jello too often but at work its better then all the yummy looking desserts and we even have a Sugar Free whipped cream...

          This is a breakfast casserole I make.. I have NO idea where I got the recipe from..but its good and MY KIDS WILL EAT it so anything the family eats is a winner. You can fix it with or without the pork rinds..

          Make-Ahead Breakfast Casserole
          8 eggs
          1 Pound Sausage (For Large Batch you can use 2 pounds)
          8 ounces Sour Cream
          1 Small can Green Chiles
          1 Cup Grated Cheese (I always use more)
          6 oz pork rinds

          Grease 9X13 baking pan
          Slightyly Crush the pork rinds and place in bottom of the dish
          Brown and Drain the Sausage and set aside.
          In a large bowl, combine eggs,sourcream,cheese, and chiles. Mix Well
          Stir in cooled sausage and pour over pork skins
          Cover with plastic wrap or foil and refrigerate overnight
          Next morning, remove the casserole from the refrigerator and let it sit at Room Temperature while preheating the oven to 350F.
          Uncover casserole and bake about 30 minutes until firm and lightly brown.

          This can be made ahead and cut into squares and frozen individually.

            I make this dessert type stuff thats pretty much induction friendly. It really helps on thoese I just have to have chocolate days.

            1 container ricotta cheese
            heavy cream
            cocoa powder
            splenda


            I put the ricotta cheese in the blender with just enough cream so it will blend to a smooth consisity. The I add cocoa powder and splenda to taste. I like mine with more splenda and cocoa then my husband does so just taste as you go along. Pour into containers and refrigate. If your not on iduction I would recommed topping this with cool whip and some grated semi sweet chocolate.

                1 can of chicken broth
                about 1.5 cups of diced broccoli tips (I just take a knife and start shaving off the tips, so they are teeny-tiny.)
                1/4 block of cream cheese.
                1/4 cup of diced red onion.

                Heat the broth and add the broccoli when it's ready to boil. boil for about 5 minutes. Add the onion. Boil again.

                Simmer for about 10 minutes, covered.

                Add the cream cheese and simmer another 5 minutes, then whisk it so the cream cheese melts.

                Cover and simmer another 5 minutes.

                SOOOO good!

                  I joined the veggie challenge and part of it is to try one new veggie during the week. I looked through DANDR and voila! RHUBARB. I've never eaten that.



                  Anyone have a jazzy recipe I can use it in? Anyone know what it tastes like? I'm clueless.

                    It's sour. Best eaten with thick cream and sweetener, and darned if I know how to cook it! I happen to love it.

                      I couldn't find it in Harris Teeter . I'll definately buy it when I can find it--maybe it's not in season?? Anywho, I bought a jicama about two weeks ago and never tried it so that will be the thing I use to fulfill the new veggie requirement. I went shopping yesterday and while putting the food away I found it in my veggie crisper--lol. Tells you what kind of week I was having!!

                      The sticker on it says to just peel and eat with dips, etc. Is that about all you can do with a jicama?

                        You can just cook the rhubarb down. Put it in a pot and let it go (watch it for awhile until it starts to 'break down'). It has tons of water in it, so don't add any. It's VERY sour...add a little splenda and you should be fine.

                        It is typically a spring thing, so I'm surprised you can find it this time of year. Smaller stalks are better...the big ones can get a little 'pithy'.
