  • Heidi - about OWL

You should do it. Best choice I ever made.

The first rung just involves eating more veggies - how hard is that? I added pumpkin which satisfies my sweet tooth, and now I have a ton of veggies all day long. As soon as I discovered that grated raw cauliflower is just like rice, I was in absolute heaven - imagine frying up some zuchini, mushrooms and red onion in olive oil, then adding a cup of grated cauliflower, turning it to high to really sear it, then back to low and sprinkling 3 tablespoons of grated parmesan on it and letting it just melt. What a yummy lunch or dinner!

Evermind that sounds delicious ........... you know the more I read today the more I think I am pretty much doing the veggie rung now LOL I have felt like I just needed more veggies so I added peppers last week watched to see if they bothered me at all and they didn't ......... then this week I made a few Cauliflower recipies up to see how I did with some of them and so far so good ........ so maybe with out even knowing it I have been doing the veggie rung! Silly me I am a horrible veggie eater so trying and adding mew veggies is a big goal for me ........ I will finish this week with Cauliflower and do one more week with something else and see how it goes before I call it official I
        guess ........

Thanks so much for your post and encouragement this is such a big deal to me it feels like a make it or break it step which I know sounds really dumb ....... I have always been a give me and inch and I'll take a mile kind of gal where food is concerned that I am afraid to give myself anything more then the strict minimum!

        I can do this!!!!!!!!!

Oooh I just love veggies and I love finding and trying NEW veggies or NEW recipes for veggies.

          Here's another cauliflower recipe:

          Yellow "Rice"
          Steam the cauliflower
          pour off the excess water
take a fork and grate the cauliflower into rice consistency
          melt some butter in it
add a packet of Goya or Knorr brand Sazon con Azafran (yellow rice seasoning)

You could also be authentic and use saffron to color it.

I then serve it with chicken or seafood or whatever. I love the stuff. When you get to starchy veggie rung, chicken and yellow cauli-"rice" with green peas is the bomb!!

OWL is just great, I'm glad I didn't even start doing extended induction.
I eat yogurt for breakfast now and discovered mascarpone and just on Friday I had Strawberries for the first time ooooh yummy.
and yesterday I discovered the best dessert I could imagine combining 3 rungs, mascarpone with strawberries and ground almonds
              I'm officially in OWL-heaven
Date to reach goal: I don't care, as long as it happens :P

                Re: Heidi - about OWL

I just wanted to add, Heidi, that the last two times I did Atkins (and lost a lot of weight, but then fell off and stayed off and gained it all back, plus) I stayed on extended induction the entire time.

This time I took a risk and moved immediately to OWL. I'm MUCH happier, and feel like it's gonna stick!
