  • Lunch Suggestions

    Well as I mentioned in Roll Call my husband is starting to eat Low carb. I usually make his lunch for him and it is usually a couple sandwiches, some pretzels, cookies and soda. Today I sent him off with Salami, turkey, cheese sticks, celery with cream cheese, peperoni, pickles and cucumbers. It sounds like a lot but I am not sure it is. He is a solid guy and can put some food away. He also is an electrician so he can't/doesn't get the chance to sit down and eat a "lunch", he just eats on the go...so salads and other foods that require a fork or any amount of time to eat just don't work. Does anyone have any other ideas that might work. (oh yeah, he also doesn't have access to resuraunts so it is not like he can just buy a bunless burger.)

    when I am stuck , I always go to mcdonalds/burger king..etc... and I go inside, I nicely ask for a few plain hamburgers no bun, no ketchup, no anything.
    They are always so happy to help.
    The drive through sometimes they can't hear me.
    Cold chicken the next day is always a treat.
    Buy some plastic forks and some cheap tupper ware. Salads are easy to make.

      I don't have much time for lunch either, and I generally bring "finger foods" to eat, because I can eat them at anytime, anywhere, and usually while I'm doing something else.

      I think you packed some good foods for him. Is your husband on induction? Here's what I usually ate on induction:

      grilled chicken tenders or breasts (grill the whole pack for dinner, take the leftovers for lunch the next day)
      pepperoni
      bell peppers cut into slices
      cheesesticks
      celery, cucumbers, broccoli, cauliflower, sugar snap peas with ranch dressing or dip
      turkey or roast beef deli meat
      pumpkin with cinnamon and cream cheese
      homemade beef jerky
      hardboiled eggs

      I always brought my food in little sandwich baggies and would prepare a few days' worth ahead of time. In the mornings, I'd grab a veggie bag, a meat bag, a fat (like dressing or dip, etc.), and some cheese and I'd be on my way!

        Definitely chicken cut into strips (like for fajitas). I can eat them cold, like a finger food. I keep that on hand at all times. Beef or pork is the same for me. I don't mind eating it cold.

        Meat and cream cheese rollups are great and easy to transport.

          If he's starting to eat low carb, but not doing Atkins and induction, then you can make him sandwiches with the low-carb wraps.

            Leftovers!! When i cook, I make extra that way i can have some for lunches the next day !!! I couldnt do this without leftovers.

            Cold chicken is always good (to me anyway)
            Pork ringds instead of chips
            String cheese !!
            veggies to snack on ....

              Great suggestions! I would also agree, plastic forks and knives etc., put in his cooler, make up tuna salad, egg salad, meat rollups with celery or cheese, string cheese or cheese curds (although not too much cheese daily) lots of water, hardboiled eggs, and they have those heater coolers (if that makes sense) maybe invest in one of those?

              Lots of good suggestions here, give some feedback, I'm sure we can help you come up with some things so he doesn't get too bored!

                When Bob was doing Atkins with me he used to love deviled eggs I wouldn't over fill them and put them together like a whole egg so they wouldn't be too messy. He also loved dill pickles. Meat roll ups and salad. Tunafish with Cheddar cheese crackers. Once you get him onto the rungs fruit and nuts add a lot of variety. I know everyone says stay away from them but BOb loved slim jims as well and never had an issue with them.

                  How about some ham, asparagus, & cream cheese roll ups, or turkey and cheese wrapped up in a dark green lettuce leaf or spinach. I also like stuff like tuna salad or shrimp salad or chicken salad. How about left overs from the night before. They are always good, unless they need to be heated up and there is no microwave.

                    Thanks for all the great suggestions! I think I am going to try and make some lettuce wraps for him and he loves deviled eggs... I never would have thought to only fill them up half way and put them back together...very clever Heidi!! I will have to ask him about the low carb wraps...I am not sure how full forced he wants to do this...He's been doing ok so far! I'll keep you updated!
