  • Chicken for breakfast!

    I have just found the site stellastyle.com and there are some wonderful Atkins smart recipes........................I was getting a little bored with eggs in the morning and now find myself eating chicken every once in a while for breakfast............even eating it cold on the run! If you haven't seen the site do take a look, George Stellas' whole family is an inspiration!

    Also had a whoosh this weekend............I could FEEL it and sure enough when I weighed in yesterday 3 pounds gone!

    Oh, I love stella style! Delicious recipes.

    IMO any food at all is fair game for any meal of the day. I eat cauliflower for breakfast LOL

      I find cauliflower hard to eat anytime of the day!! What makes it delectable for you? Are you eating it plain?

      I am willing to eat it if there is some secret, or motivational thought as to why I should eat it!haha.

      The spirit is willing but the taste buds are weak!!

        Well, being from the south, I've been missing grits with my eggs.

        So, I microwave up some frozen cauliflower and use my hand held immersion (stick) blender to make it into the consistency of grits. Top with some butter and fried eggs. In the south, we mash up the fried egg into the "grits" (cauliflower for me) and eat with salt and pepper.

          I never ever would have thought of cauliflower grits. Do you know what the cauliflower mashed fauxtatoes are like? I just can't work myself up to trying them...

            I love the "fauxtatoes" too LOL I like to do the same as making "grits" but add butter, cream and some cream cheese. It's uber yummy.

            Stella style has an INCREDIBLE recipe for making a "mockafoni and cheese" type recipe. That tastes fantastic too.

            Also, I will steam the cauliflower until it's pretty soft, then "shred" it with a fork until it is the consistency of "rice" and use it as a sub for rice under chili. I also will sometimes add the Goya or Knorr brand "sazon" spice to make yellow "rice" with the cauliflower. Then add chicken and I've got chicken and yellow "rice". I've made cajun style "dirty" rice using cauliflower too.

            AND the absolute BEST is to use cauliflower instead of potatoes in "fauxtato salad". Make the salad the same way you would regular (unless you use sweet relish--get the sugar free one or use dill relish). I resisted doing that for a long time, but finally tried it and now it's one of my favorite dishes. AND its a favorite among the non-low carbers too. Everybody loves it.

              Whoa! You are a cauliflower queen! The yellow "rice" sounds tasty! Thanks!

              Stella style is great! I've never been to the site before but I think it will become a favourite! They look so amazing now! You are right, Keystone, they are an inspiration. And congrats on your whoosh!

                Just watch all the ingredients. Most of the recipes are OWL friendly, not necessarily always induction friendly.

                  Apanthesilia and Valid Rouge, thanks for responding! Maybe I need to get some cauliflower and do some experimenting! Thanks for ideas and the permission to get creative with my food! I WILL play with my food!!

                  Apanthesilia- I lived in Maidstone (Kent County) England for a year and there is not a day that goes by that I don't think about it!!

                  I am off to find the stella low carb cookbook. Sams nor Walmart have it............I think it has been out a few years...........

                    I had a baked chicken breast for breakfast this morning. I don't really get peoples' notions that certain foods are only to be eaten at a particular time of day... I never have. I eat scrambled eggs for dinner now and again. Yummmm.

                      Have a super bowl party tonight and the host is fixing BBQs. I made a broccoli and cauliflower salad. Has some sunflower seeds,bacon, raisins ( I will pick them out) splenda, mayo and purple onion...................

                      I am going to be good tonight and end the night carb free! meaning I will not put into my mouth what is not allowed! Deal? Deal!

                      The recipe I made was actually a broccoli recipe and made it into a cauliflower recipe too...........I am experimenting!

                        Thanks for posting the link to the Stella family site! I didn't know about that one and it was inspirational! I hope that some day I can cook low-carb for the entire family and not have to make different meals for everyone every day. Oh, and I eat bacon and cheese omelettes for dinner sometimes so no worries!

                              I was able to find Georges first recipe book, will order his second book online. Was hoping to thumb through it before buying, but the first one is excellent so will take a chance.
