  • Wfd- Monday

I'm drawing a blank and afraid i'll slip if I cannot think of new and exciting basic foods. So, I'm turning to those also in the same boat.

What did you have for supper on Monday night?

Tonight I got home from work about an hour late, and immediately I panicked because it's only DAY ONE and I didn't know what I'd be having for dinner. Lo and behold, my husband had cooked up some beef stroganoff thing which was accidentally low-carb (although he ate his with noodles, I obviously did not). I asked him what was in it and it was ground beef, onions, beef broth, some spices, and then we topped off our plates with a dollop of cold sour cream. The ingredients are so basic, but the taste was so much fancier than another bunless cheeseburger. I am going to add this to my repertoire of recipes for the future!

The best salad in the world! Two cups of lettuce, half a cucumber sliced up, four chicken tenders made the way the chicken is made in Linda's Low Carb Cajun Style Chicken with my own twist to it(Cut up, stir-fried in canola oil(1/2 tbs) and salted sweet cream butter(1 tbs) then add the mixture of basil, pepper, and garlic powder. (I use half of what the recipe calls for since I use about half of a pkg of chicken tenders). Add the chicken to the salad and then pour the butter/oil mixture over everything. Then I top it all with shredded mexican cheese and let it melt on the chicken a little bit. YUMMMMM!!

I didn't really measure anything but here goes...

Took 3 large cartons of low sodium chicken stock in a big pot. (I'm cooking for 5)
Added 1 large bag of frozen broccoli
After about 20min, I used my stick mixer to blend it a bit - still want some florets of broccoli
Added about 15 slices of american cheese and 1.5 cup shredded sharp cheddar
mixed it all in, let sit for 20min.
At the end, I threw in about 1.5 cups of heavy cream.
                Garnish with sharp cheddar.

I don't know the carb count, but assume (dumb me, 'eh? ) it's legal. It really is fantastic - even my picky kidlets liked it.

                    Hi Rachel,

There are also two threads going called What's for Lunch and What's for Dinner, that people input what they have had for same and it really gives some great ideas.

BTW this is the second thread i see with the wfd, what does this mean? Thanks.

I keep hoping the mods would make these stickies that can be added too as they are awesome reference material for people who are drawing a blank as to what to have. I think it would be cool if there were stickes for What's for Lunch, Dinner, Breakfast, Snack, so people can do quick reference and finds and to add too.

Last night was simple. We just had big salads with red peppers, hard boiled egg, and some bacon.

Oh Thanks for the WFD lol duhhh now that i see it in words,

No these are actual threads where people simply state what they have had for Lunch and Dinner, it is on going sometimes people will put a recipe but mostly its simply what someone had for dinner and is ongoing:

                          What's for Dinner Today:

                          What's for Lunch Today:
                          http://www.atkinsdietbulletinboard.c...ighlight=Lunch

They are ongoing when people want to post what they had for dinner or lunch.

Hope they help, one of the biggest things on this way of life is realizing what you may not have realized you could have eaten based on what someone else thought of to have for dinner or lunch. Like you, i have pulled off concepts of what i could have for dinner and lunch based on what someone else has had because i drew a blank and got tired of the same ole thing.

                          Good luck.
