    At bonko last night one of the gals made a dip using a weight watchers recipe. It had pineapple, cream cheese, onions in it.. egads.. yes, I sampled on a spoon. I searched the internet this morning and found this:

    2 (8 oz.) pkgs. cream cheese
    1 (8 oz.) can crushed pineapple (best in heavy syrup)
    1/4 c. finely diced green peppers
    2 tbsp. finely diced onion
    1 tbsp. seasoning salt



    Soften cheese. Drain pineapple. Mix all of the ingredients well. (Best if made 24 hours in advance so that the flavors mix together.)

    I'm thinking make half the recipe.. and use pineapple extract.

    Anyone have any suggestions? I cannot think of what to add in place of the pineapple.. to give it some chunk... oh! How about chayote? cooked in the pineapple extract? I'm not very good at this LOL

    Basically what the pineapple is doing - especially if with heavy syrup, which is basically just additional sugar - is adding sweetness. So I'd say a sweetener or some low-carb syrup in whatever flavour you want would work instead.

      You are probably right! I'm soo gonna have to try it! It was soo good. She had choppped pecans on top.. and the flavoring of onion was soo good. I could have eaten it witha spoon!

        Chayote works great if you cook it in a flavour...I used to cut it up and cook it in Atkins Morning start apple drink (not sure if they make it anymore but they dont' sell it here) and it would pick up the taste of the apples and be the perfect cooked apple consistency.

        Not sure where chayote falls on the veggie rungs though..It's very low carb but no idea if it's induction friendly? I love chayote!
