  • Over indulging in veggies

    I know we are to have 2-3 cups of certain veggies and 1 cup of another. I know the glycemic index comes into play and that's why the veggies are seperated like that. I also discovered I could over indulge on veggies! Once I found pumpkin.. egads. I wanted it 2x a day! I cannot do that AND eat from the 1 cup veggie list. It's too much. I looked at my menu logs from the last two weeks to see why I was not losing. Ah-HA! Over indulgence of veggies! And probably cheese! I'm really making myself aware that just because it's a legal food still does not mean I can have unlimited quantities.

    I do have my three servings of pumpkin scattered throughout the week now that I sat down and made my menu for the week. Let me just say we will be eating good. It's just such a toss up between wax beans or green beans LOL I really have to pay attention from which list my veggies are coming from.

    But, I have the week planned and it should be a great week! I love this WOE!

    omg. tell me about it. I made a pumpkin pie last night that shoudl prolly had another egg but it tasted JUST like pie.

    1 1/2 cups pumpkin
    2-3 eggs
    2 tsps pumpkin spice
    1/2 pack creme cheese.
    6 packets splenda
    cooking spray

    PREHEAT OVEN

    1) soften the creme cheese in the microwave and then mix in 3 packets of splenda.
    2) mix pumpkin, eggs, pumpkin spice, and 3 packets of splenda together.
    3) when done mix them together
    4) bake at 325 for 35-60 minutesoruntil toothpick comes out clean in greased (cooking spray) pie or round cake pan.


    Restart: DEC. 16th, 2009 (why wait for Christmas)

      hahahah, too funny! I copied that recipe earlier today and wanted to ask if you had a carb count for doing it muffin-style? I'm afraid I'll eat the whole thing or it will go bad before I can make it so I have to buy my pumpkin in smaller cans and just have 1 can on hand a week!

        You can use a dash of heavy cream instead of the cream cheese. And you can use a quarter cup of pumpkin and it's still good and filling.

        I wouldn't worry about eating too many veggies, frankly, as long as they are from the acceptable on induction list.

        Cheese is another story.

          For me, the cream cheese thickens it up and that's what I like. It's too much like baby food otherwise.

          It's not just the veggies..it's what I eat along with them that adds up LOL

            I love veggies! Until this WOE I never realized how much of a risk it was to OVEREAT veggies. never before did I worry about overdosing on them lol

            I still try to keep them in somewhat moderation and stop when I'm full. Sauteed mushrooms and raw red peppers have become my new weekness though
