I know we are to have 2-3 cups of certain veggies and 1 cup of another. I know the glycemic index comes into play and that's why the veggies are seperated like that. I also discovered I could over indulge on veggies! Once I found pumpkin.. egads. I wanted it 2x a day! I cannot do that AND eat from the 1 cup veggie list. It's too much. I looked at my menu logs from the last two weeks to see why I was not losing. Ah-HA! Over indulgence of veggies! And probably cheese! I'm really making myself aware that just because it's a legal food still does not mean I can have unlimited quantities.
I do have my three servings of pumpkin scattered throughout the week now that I sat down and made my menu for the week. Let me just say we will be eating good.
It's just such a toss up between wax beans or green beans LOL I really have to pay attention from which list my veggies are coming from.
But, I have the week planned and it should be a great week! I love this WOE!
