I don't know what to make for dinner tonight. I made meatloaf last night and had onion, mushrooms, and green beans for veggies with it (and potatoes for dbf). Any suggestions for tonight? I'm not bored with the food and I'm not tempted to go off plan, just wanted to get a few ideas from my fellow stacers! Hope all are well today!

Here are some of my favs:
Chicken, mushrooms and onions cooked in Boursin (garlic and herb full fat one) and a dash of cream (takes no effort to cook and is delicious)
Roasted pepper with goats cheese
sausages with mashed cauliflower
Buffalo mozerella, parma ham, one tomato, half an avocado drizzled with extra virgin olive oil
Burger, cheese and mayo on a small salad
Pepper stuffed with cream cheese (or goats cheese) wrapped in bacon
Mushrooms stuffed with cheddar and mayo mix baked in oven then topped with crispy bacon
Crustless quiche

The chicken and boursin is DELICIOUS! You can just make mushrooms and onions (and courgette) with boursin too which is scrummy. As it is high fat, it really hits the spot too.
I pinched the mushroom recipe from Come dine with me (do you ever watch that?). It just happened to be low carb!
Serves 5
Ingredients
10 portobello mushrooms
500g scottish cheddar cheese
3 heaped tbsp mayonnaise
3 tsp dijon mustard
5 rashers of bacon
1. Preheat oven to 180°c, Gas Mark 4.
2. Wash the mushrooms and grate the cheddar cheese. Mix the cheese with the mayonnaise and mustard in a bowl, then fill the mushrooms with the mixture.
3. Pop them in the oven, at 180°c (Gas Mark 4) for 20 minutes or until the cheese has browned.
4. While the mushrooms are in the oven, cook the bacon until crisp, then take the mushrooms out of oven and crumble bacon on top.
5. Serve with a side salad and dressing.
Haven't tried them yet but they looked delicious and everyone on the program enjoyed them. Am going to make them next week.

BTW Have you seen 'low-carb meals in minutes'? It's available from Amazon and full of brilliant recipes. For some reason they use low fat stuff but that's easy to change!

I had hot wings for breakfast.... that's always good and easy
I'm making bbq pulled pork for dinner in the crock pot (I found bbq sauce with no carbs yay, I'm still only using a touch)
also made whipped cauliflower with butter, garlic and dill AND I'm so excited, it's the first time I got the consistency right. I used the blender and added a touch of sour cream.
Also made coleslaw to go with it.

Last night I made London Broil with loaded cauliflower (yummy!)
I love...
Parmesan crusted chicken breast
Steak & asparagus with garlic butter
Shrimp scampi with yellow squash/zucchini mix
Plain ol grilled chicken salad (use leftovers from parm chicken)
Philly's w/o the bun
Carne asada w/ avacado & salad
Broccoli, chicken, cheese casserole

Thanks, I'll give it a try..... the pulled pork tonight was AWESOME.
