  • Help me choose what to have this evening!

    Here's the menu

    http://www.carluccios.com/caffes/pdf/MainWinter08.pdf

Was thinking of plate of parma ham to start and seabass for main but ask them not to use potatoes (you have to remember this is England so it may not be possible to tweak the menu). If not, then I guess the steak?

I would be afraid of sugar being used in the curing of the ham. So, i wouldn't choose that. I would have the ribeye and a lil salad. Maybe the mushrooms for an appetizer.

      Hi Snap

I have eaten loads of parma ham and have never known it to be cured with sugar. I will check next time I buy it but it's just not that type of ham (thin sliced Italian). I so hope it doesn't contain sugar!!

Hey Zarabelle. This is what I found when I googled the ingredients of the Parma ham. According to this... it could contain sugar. Geez... I wonder how one would know if their Parma ham does or not. Not like you can run back to the kitchen and read the label. I think the not knowing would make me skip it.

Parma ham, the so called Prosciutto di Parma, has almost 200 producers concentrated
in the eastern part of Parma Province. Its production is regulated by a quality consortium that recognizes qualifying products with distinctive mark. Only larger fresh hams are used (12-13 kilograms). Curing uses relatively little salt, but can include garlic salt and sugar producing a sweeter meat. After salting, the meat is sealed with pig fat over the exposed muscle tissue, which slows drying. Curing occurs over a minimum 12 months. This curing method uses only salt, without nitrates and without spices. No conserving substances added. San Daniele ham (Prosciutto di San Daniele) is the most similar to Parma ham, especially the low quantity of salt added to the meat, and is the most prized ham. Other raw hams include the so called "nostrani" or "nazionali" or "toscani", they are more strongly flavoured and are produced using a higher quantity of salt.

          HI Snap

Thank you very much for posting this. Luckily the one I have been eating does not contain sugar (I remember checking it last time)
          http://www.tesco.com/superstore/xpi/7/xpi54317027.htm

The one at the restaurant was also cured with salt and was not sweet. Phew!

I appreciate you bringing this to my attention though as I was not aware that it ever contained sugar.

              Hi MS

We get the real deal here - Buffalo mozerella - I love it and it is so low carb. I have it with avocado, parma ham and a tomato with fresh basil and extra virgin olive oil - scrumny!

Luckily this restaurant also has a shop so you can buy the best parma ham etc. there.

It's a shame you can't get it in the states.

For starters, the antipasto looked really good. I think the sea bass sounds delicious. The last salad on the list would go good with that.

I am just waiting to find somewhere that carries fresh mozzerella to try a caprese salad. I grow my own basil and fresh tomatoes, so all I need is the real deal mozzerella. It looks absolutely devine.

                      Sunny!

Re: Help me choose what to have this evening!

I googled fresh buffalo mozzarella and found a place in Vermont that makes it called Woodstock Water Buffalo. The USA makes them use pasteurized milk, so it wouldn't be exactly like it is made in Italy, because they make it from raw milk. The thing about it is that it is only good for a few days after it is ready. According to their website, there is a natural food store in Charlottesville that carries it. It would probably be pretty old by the time it traveled from Vermont to Virginia. I practically live in Charlottesville, because that is where the UVA hospital is that I have appointments at several times a month. I might give it a try when my fresh tomatoes and basil come in this summer.

I had (asked for it off menu) buffalo mozerella, a couple of sun dried tomatoes and one tomato with lots of extra virgin olive oil and then a 8oz fillet steak with sauteed mushrooms and spinach. It was delicious! Probably the best steak I have ever had in fact. x
