  • Yellow Bellpeppers

    Ok, so I know we can have bellpeppers. But can I have the yellow ones? Those are my favorite, they are kinda sweet tasting. When I get a sweet craving, I like to eat them raw. I stay within my 20 carbs..but I was worried because they were the yellow and not the red or green. Does anyone know the answer to this?

    yellow is fine, same with the orange ones. Red ones are my favorite cause imo they are the sweetest

        I used to fill them with cottage cheese but I am not on that rung yet so I just eat them like apples. They are so yummy!! They tend to be a bit more expensive up here in Canada - like 2.97/pound. I see it as an investment in my health and release the guilt. Enjoy!!

          For the most part all bell peppers are the same. The green peppers are merely the unripe version of the colored peppers. The colored ones taste sweeter because they've been allowed to fully ripen on the vine in the sun so no need to worry about color

              mmmm I wanna try stuffing red and yellow bell peppers with ground beef, mock fried rice (cauliflower) and feta....

                  I love red and yellow bell peppers, so when I gave up so many favorites I started treating myself to those and I lost 120 pounds eating them nearly every day. When I was not doing Atkins, I wouldn't pay $4 a pound, but I do now. I grow both in the summer and they freeze really well for use in cooking, so I only pay the big bucks in the winter for fresh. It's worth every penny I pay to have them any time I want them.

                    What do you do to the peppers to freeze them? Just cut them up and put them in Freezer bags? or do you blanch them? Hubby always has a garden and I wouldn't mind doing that...

                      I don't blanch them. I just cut them in several shapes like wide strips, thin julienne strips, large cubes and minced small, then I put them on a wax paper covered cookie sheet and freeze them so they freeze faster. Then I put the different shapes in quart size zip freezer bags. You can just keep adding to the individual bags until they are full. When I use the wide strips in stir fry or roasted veggies, you can't tell they weren't from fresh. Same with the small cubes that I put in eggs and other dishes.

                      I do the same with the over-abundance of fresh herbs in the summer.

                      I am almost out of what I froze last year, so I am having to conserve.

                          I freeze them as well... and yeah.. I just cut them in quarters and de-seed... and put in freezer bag... they're just as good as fresh in meat loaf.. etc..

                          I bought bell peppers today... wal-mart had them for $1.25 each... and they were really big nice ones... red, yellow, or orange... the green ones were like 89 I think...
                          2-15-10 194.8 - highest ever!

                          3-20-10 177.8 - 1 month
                          5-10-10 169.8 - 25 pounds gone!
