I have been looking around on the board what everyones feedback to eating 65% fat is - I know why the fat is important for Atkins to work, but would prefer to eat only "healthy" fats - do you guys have actual food suggestions - I know most , but any new one might help. I am not to keen on eating skin (chicken) and already use olive oil & mayo.

After reading "Good Calories, Bad Calories" I'm convinced that the "healthy" fats ARE the natural fats found in our food, when eaten in their entirety. This means eating the whole avocado, whole olives, etc. I do use olive oils and coconut oils, but I believe that the healthy fats are the natural fats in REAL butter, the natural animal fats in the chicken skin, and the pork fat, and beef tallow.
I have the continually lowering cholesterol numbers to prove that this is a healthy way to eat as well. I strongly urge everyone to read that book, look at the "research" and the dogma that "unhealthy fats" supposedly cause heart disease risk, and then make up your own mind.~Joy

There's a little too much stress these days placed on naturally occuring saturated fats. The real problem fats in our lives are processed fats, partially hydroginated fats, things like that.
My bloodwork at 2 months into atkins this time (and a year in last time I did this) bear it out. I prefer the natural fats that come with my meat. I love REAL butter (sorry margarine but you have no room in my life), oils, avocados, olives. I'm on the nuts rung now so nuts are just wonderful. Addictive so I have to be careful - but tasty either way. I'm wanting to buy some flavored oils and try that outF 24 5'10 SW - 217 GW 170 restarted atkins 1/14/08 - This time I'm sticking with it!

I have been trying to get more MUFA's into my diet and have found delicious ways to do this. I make fresh guacamole twice a week that is loaded with good for you stuff. I love black olives and I discovered black olive tapenade, which has besides black olives: fresh garlic, capers, fresh parsley, extra virgin olive oil--all super good for you and I love it on soft scrambled eggs, which are another healthy source of good fat. I also eat a lot of salmon and tuna. Both good sources of healthy fat. It doesn't take that much fat to get you into the 65% range.

According to a report from Harvard School of Public Health. the total amount of fat in the diet, whether high or low, isn't really linked with disease. What really matters is the type of fat in the diet. New results from the Women's Health Initiative Dietary Modification Trial showed that eating a low fat diet for eight years did not prevent heart disease, breast cancer, or colon cancer, and didn't do much for wightloss, either.

That doesn't sound stupid. We are not used to thinking these things out and we are now having to think a whole different way about the food we consume.
