    I searched and ran out of patience searching (my eye lids are not awake yet), but I did find one by googling...I think it's the same one that I've seen posted here before...it looks the same to me.

    Muffin in a Minute-Suitable for Rung 3 of OWL, but can be altered for Induction

    Serving Size: 1

    1/4 cup flax meal (Induction only allows 2-3 TBLs? It's technically a seed---rung 3 of OWL)
    1/2 teaspoon baking powder
    1 packet splenda packet
    1 teaspoon cinnamon
    1 large egg
    1 teaspoon butter

    Put the dry ingredients in a coffee mug. Or a bowl for a different shape.

    Stir.

    Then add the egg and the butter. Mix.

    Microwave 1 minute (or more). Take out. slice, butter, eat. Set mug to soak immediately.

    Cream cheese would go nicely, too.

    Notes: 1.5 net carbs.

    Per serving: 235 Calories; 18g Fat (63% calories from fat); 12g Protein; 11g Carbohydrate; 9.5 g. fiber; 223mg Cholesterol; 284mg Sodium

      I'd recommend the Alternative Atkins Revolution rolls (aka the "Oopsie" rolls) as a great alternative for the muffins. I've come to enjoy them much more

          Oh no I disagree. Nothing beats the one-minute muffins That is the recipe I use but I tend to use 1 tsp baking powder - seems to work better for me.

          I like oopsie rolls too though

              Hi,

              Here is the recipe for a MOMM - Modified One Minute Muffin (I like the taste of these better):

              Modified OMM Sandwich Bun
              1 Tablespoon milled flax seed meal
              1 Tablespoon ground almond flour
              1/2 Tablespoon grated Parmesan cheese
              1/4 teaspoon baking powder
              1 Tablespoon melted butter or coconut oil
              1 egg
              1-2 drops liquid Splenda (optional)
              Seasonings to suit...

              Same mixing and cooking directions as above.

                The Oopsie rolls are great because you can eat the whole batch yourself if you feel like it I admit to downing 2 last night and 1 today. Which when you figure it is still only 1.5 eggs and 1.5oz cheese. And you can use them for sandwiches, pizze crust, whatever.

                  I made the oopsies, but the egg whites didn't stiffen up. Well, they did, but I may have overbeat them because they dropped. I just took the recipe and put it into a cake pan. It turned out ok. I now have 8 small instead of 6 mediums.

                    Here''s what I do on the whites. First make sure to put the bowl and mixer in the fridge for at least 30 min. Use a glass or metal bowl. Then take the egg whites and add a small sprinkle of salt. Beat for 2 minutes. Then add your acid (lemon juice, or whatever) and beat for 2 more minutes. At that point it should be REALLY stiff.
