Like most people, I quit "doing Atkins" b/c of boredom/lack of variety. Now I see it was a lack of creativity on my part. Thank God (and I really do thank Him) for others who share their great ideas... what a difference this time around. NOW I believe this is a lifestyle I can live with... not just a diet to be endured!
I found this recipe on here earlier, but didn't have cream cheese... so I ran to the store and as soon as I got home, tore into the package to get started. (I'm on induction day 5 and really missing something sweet!)
I mixed the ingredients as directed (adding about 1/4 tsp of lemon juice for that 'cheesecake' taste), then sprayed a large plate with butter flavored nonstick spray...poured it on and sprinkled with the *teeniest* bit of cinnamon... then microwaved for about 50 secs.
The result looked like custard. I let it cool, then I rolled it up like a crepe... and YUM! It is heavenly! I can't wait to make one for my DH who is also doing Atkins. (He's a recovering cheesecake-aholic!)

Mock Danish
one serving
2 oz cream cheese (2)
1 large egg, beaten(0.6)
1 packet Splenda(1)
1/2 teaspoon vanilla extract(0.3)
Put cream cheese in a small, microwave-safe dish. Microwave on high for about 1 minute or until softened. Remove from microwave. Stir in the egg, Splenda and vanilla extract into the cream cheese. Put back into microwave and cook on high for 2 minutes.
Total carbs: 3.9 grams
Fiber: 0 grams
Net carbs: 3.9 grams
Cheese allowance: 2
Sweetener allowance: 1
*Note: Cream cheeses vary in carb count. So be sure to check your packages. Also note that some people add a tablespoon of fiber supplement to their Mock Danish to give it a more "bready" (sturdy) texture. If you do this, you MUST include the the fiber supplement carbs.
