    And had plenty of chicken pieces so I picked up turnips.


    Here is what I came up with!

    Chicken and Turnip soup

    Campbell's Chicken Broth, 3 cup
    Turnips, 2 medium, cubed
    Spinach, fresh, .5 package (10 oz) washed and cut in small pieces
    Chicken Thigh, 7 thigh, bone and skin removed
    Onions, raw, 1 medium (2-1/2" dia), diced
    Dash red pepper flakes

    Cook chicken thighs in broth and debone, boil onions and turnips. Watch the turnips, it does not take long before they are soft. Take off heat and add spinach leaves.

    So net carbs per serving is 3.3. It is really tasty too. You can get low salt chicken broth if you prefer to watch the sodium. Some diced tomatoes would be good in this... When I am OWLing I will likely add tomatoes.

    You will need to eat it with something with more fat, or you could fry some sausage and add to it, that would balance the fat out and taste awesome too!

    Good for you! We make soup every week. I generally cook at least 1 whole chicken a week, so when it's done I carve off most of the meet and toss the carcass in big pot to simmer down for stock. I love it with Zuchini, green beans, and leftover chicken bits. I've tried every turnip recipe known to man, and I just can't stomach the darn things.
