  • breakfast ideas needed

Hi everyone! I just joined this group today. I posted an intro on the newbie forum, but I think this is where I belong. My first time around with Atkins was from July 03-Oct 04. I lost 80 lbs. In the 4 years since, I've put all the weight back on. I am ready to begin again. And I'm ready to be successful at keeping it off for good. I plan on starting induction on Sept. 2nd. I'm a teacher and I begin school again and I think being out of the house and away from temptation will help in the beginning! Also, I'm doing my research again- reading DANDR and different websites. Here is my problem- I can't eat eggs- I developed an allergy to them the first time around and now I can't have them- even periodically. So, I was thinking that in the morning, I'd do the Atkins shakes or breakfast bars. I really like having "breakfast foods" in the morning and don't know if I can do a burger or chicken, etc. So, anyone who might have any advice or other ideas, I'd truly appreciate it! Thanks so much for listening-

    Hi and Welcome!!!!!

This place is truly great and inspiring. I had ton of success on Atkins, but fell off the Atkins wagon and had some terrible health issues along the way and put some weight back on. This time around I intend to honestly commit to this WOL/WOE! I feel so much better without all the garbage.

Anyway, go to the following website below:

Linda's Low Carb Menus & Recipes - Home

She has everything you will ever want to make and know. She even labels which recipes are Induction friendly. Her website is a life saver!

breakfast meats on oopsie rolls... flax crackers or "cereal"(you don't get much flax, so that would be limited) pork rind french toast....

Have you determined if you are allergic to the whole egg, the yolk or the white? If you are allergic to the whole egg I can't really think of much beside meats that you could eat for breakfast that would be breakfast traditional. Sausage and bacon. Then you really have to watch for hidden fillers and sugar. Chicken salad might be good.

Wow, breakfast without eggs? That sucks!

Other than sausage, bacon, etc. I honestly can't think of anything good to substitute.

You said you like having "breakfast foods" but you can't have eggs and you don't want to do meat. I'm just wondering, what "breakfast foods" are you used to having now, you know, what do you consider "breakfast foods" if it's not any eggs or meat?

Maybe that would be a good start to have everyone help figure out some good substitutes.

I used sliced meat and cream cheese alllll the time. I also use sausage patties, with a slice of tomatoe and cheese over the top.

                    Re: breakfast ideas needed

Hello- here are some great ideas for breakfast and for whenever you have a sweet craving...
I have had this for breakfast for the last week and I am still not tired of it..I double up on the recipe because I found 1 egg wasnt satisfying enough..AND I found that using WHIPPED cream cheese has less carbs-
1 as opposed to 2 on the regular cream cheese for 2 oz.
and does NOT affect the recipe at all on the Mock danish..
the cream cheese pancakes are just as good and easy to make the night before and take to work in the morn with a pouched egg and bacon.pouched eggs in the micro are easy if you put a little water in a cup and it comes out really nice from a styrofoam cup.
the cream cheese pancakes have 1 carb per pancake and the Mock danish has 2 carbs or if you double the splenda in the recipe but mine is 4 carbs because I use 2 packets of splenda..and for great ideas I have found this website too that has great ideas...Linda's Low Carb Menus & Recipes - Home
                    here you go, enjoy

                    Mock Danish

                    Ingredients:
                    2 oz. cream cheese
                    1 large egg
                    1 packet Splenda
                    1 tsp vanilla flavoring

Soften the cream cheese in the microwave for 20-30 seconds. Add the egg, Splenda, and vanilla and beat well until completely blended. Nuke for an additional 45 seconds - 1 minute depending on your micro. You want it to look like custard not scrambled eggs. Stir and Add a dash of cinnamon and a pat of butter on top...I DO NOT STIR_IT LOOKS BETTER THAT WAY..You can eat it without the cinnamon but that is what makes it taste like a Danish.

                    Cream Cheese Pancakes

                    4 eggs, separated
8 oz cream cheese, softened at room temperature
2 tbsp Sugar Twin (or equivalent Splenda whatever that would be)
                    1/4 tsp vanilla
1/4 tsp cinnamon butter for frying

Using a whisk, mix the egg yolks and the cream cheese together until smooth. Add Sugar Twin, vanilla, and cinnamon, stirring to mix thoroughly. Use electric beaters to beat the egg whites until very frothy. Gently fold the egg whites into the cream cheese mixture. Using a 1/4-cup measuring cup, drop the batter onto a buttered skillet over medium to medium-low heat. Let each pancake sit until it starts to bubble a bit (at least a minute or a minute-and-a-half), then flip and cook other side until golden brown (for 30 seconds to a minute). Makes about 14-16 pancakes, less than 1 carb per pancake. No need for syrup, but if you want that maple flavor with your pancakes, just mix a few drops of maple flavoring into softened butter with a little Sugar Twin (be aware that this may add another carb or so) and you're good to go!
