  • Atkins Baking Mix

    Good afternoon STACers! I've got several Atkins recipes that call for "Atkins Baking Mix" but it is no longer on the market. What are we supposed to use and is there a recipe for it? Need your help, because I really want to make some low carb breads, etc.

    I found this recipe recipie on Google today:
    ATKINS BAKING MIX SUBSTITUTE
    Source: Unknown
    Approximately 3 carbs

    1 cup soy flour* •
    2 cups soy protein isolate*
    2 tablespoon baking soda
    1 teaspoon salt •
    2 tablespoons Splenda

    Sift together then store and use as you would Dr. A's. It's much cheaper and things come out about the same.

    *You could try substituting Soya powder (milder taste) for the soy flour and substituting egg protein for soy.

      Thanks so much for this info ... BTW, what is soy protein isolate?

        Isolates
        Soy protein isolate is a highly refined or purified form of soy protein with a minimum protein content of 90% on a moisture-free basis. It is made from defatted soy flour which has had most of the non-protein components, fats and carbohydrates removed. Because of this, it has a neutral flavor and will cause less gas due to bacterial flatulence.
        Soy isolates are mainly used to improve the texture of meat products, but are also used to increase protein content, enhance flavor, and as an emulsification.
        Currently, the FDA is examining health concerns related to levels of the toxin furan in soy protein isolate and other foods.[1]
        Pure soy protein isolate is used mainly by the food industry. It is sometimes available in health stores or in the pharmacy section of the supermarket. It is usually found combined with other food ingredients.

        It looks like you can get it at GNC and Vitamin World

              Well I have bad news to report ... the recipe for Atkins Baking Mix is the worst stuff I have ever "not" eaten. The baked result was so smelly and disgusting I had to throw it away and air-out my house. I used the homemade baking mix recipe to make an Atkins recipe for basic bread (out of one of the Atkins cookbooks). The recipe called for Atkins Baking Mix (but of course they don't make it anymore).

              I'm now going to try and find some Carbquik, which was also recommended, but I'll have to order it online and pay outrageous shipping for it. I'm not a happy camper!!

                Talk about nasty taste and smell--Carbquik takes the award. Nasty stuff!

                  not sure if I can mention it here if not please remove but I order mine from netrition and the shipping is 4.95 (unless its changed) for everything you order. So thats not bad.

                    I like carbquik. I order it from carbsense.com (something like that).... my favorite dessert =

                    1/3 cup carb quick
                    1/3 cup davinci syrup
                    2 tbsp low carb choc chips

                    stir up and microwave 1 minute 30 seconds and then I have what taste like a cookie
