    I'm wearing my green like a good Irish girl! Been happy with my initial weight loss. Week 2 of induction and going strong. Been working out almost everyday so thats good. I need to concentrate on my water intake this week. I dont think I've been drinking enough. I'll have to force it down since I've never been one to drink a ton of water.

      Successfully did Atkins in 1998 using 1992 copy of the book...before it was "hip". Lost 60lbs, exercised daily, felt and looked great. And then I moved in with a junk-food loving man, my mom got sick and passed away, then I suffered a spinal cord injury, and junk-food dude left me...and now I weigh 292lbs. That's 22lbs MORE than I weighed the first time around. It's 10 years later...I know this will work for me again.

          Hey Everyone Top of the Morning to you!

          With a name like Erin... I get "are you irish?" all the time! (*And for the record... I am Ukrainian LOL)

          I made green eggs and ham for breakfast.. a dribble of food coloring works wonders... and my kids loved it

          I have a saucy side about me too... we are going out for drinks with friends tonight (Water only for me thanks!) and I have a shirt that says Erin Go Braugh(less!) LMAO

              I restarted this woe last Monday and realized something was missing - I missed the accountability, support and daily banter of checking in here

                happy st. patrick's day!

                I hope all you non-green wearing killjoys get pinched! I'm actually wearing black from head to toe, but I'm wearing green socks, shamrock earrings, a green necklace, green nail polish, and green eyeshadow. hehehe!

                so the 204 bobbed back up to 205 after too much salt last night, grrr. weirdly though, i feel like I've lost in spots since yesterday. I'm wearing the same work pants (don't tell anyone) and they are definitely looser. weird.

                I might never make
                Lauren's Pumpkin Gooey Butter Cake again, however. it's way, dangerously too good. seriously...better than any pumpkin pie or pumpkin cheesecake I've ever had!

                    Healthy Pumpkin Gooey Butter Cake
                    Adapted from a recipe by Paula Deen

                    Serves eight


                    Ingredients:
                    Crust Layer:

                    1/4 cup of organic unsalted butter, melted
                    2 ounces of cream cheese, softened
                    2 cups almond flour
                    1 large organic egg
                    1 teaspoon pure vanilla extract
                    1/8 tsp sea salt
                    3/4 cup erythritol or 1/2 cup xylitol, powdered
                    1/4 teaspoon pure stevia extract (NuNaturals)
                    1/2 teaspoon aluminum-free baking powder
                    1/4 teaspoon cinnamon

                    Filling Layer:
                    8 ounces cream cheese
                    1 stick unsalted organic butter, melted
                    1-15 oz can of pumpkin puree
                    3 eggs
                    1 teaspoon pure vanilla extract
                    3/4 cup erythritol or 1/2 cup xylitol
                    1/4 teaspoon good-tasting pure stevia extract (NuNaturals)
                    1 and 1/2 teaspoons cinnamon
                    1 teaspoon nutmeg
                    1/4 teaspoon ginger

                    Preparation:
                    Preheat oven to 350 degrees.

                    For crust, melt butter and soften cream cheese in microwave. Grind erythritol in coffee grinder and mix into batter. Mix together until smooth, then add vanilla, egg, and sea salt. Add stevia, baking powder, and almond flour. Scrape into an 8 by 8 metal pan and spread out over the bottom. Bake for 15 minutes and remove to cool.

                    Soften cream cheese and melt butter in microwave. Grind erythritol in coffee grinder or magic bullet. Beat cream cheese and pumpkin until smooth and without lumps. Add eggs, vanilla extract, and melted butter, and beat until incorporated. Next, add erythritol, stevia, cinnamon, nutmeg, and ginger, and mix just until smooth. Set pan down on counter top a couple times to get out air bubbles. Pour pumpkin mixture over crust and bake for 55-60 minutes, or until center jiggles a bit when you move the pan. It will set up and sink down upon cooling overnight in the refrigerator.

                    Serve topped with fresh whipped cream to max out the decadence factor. Let eyes roll back in head.

                              I'm a second grade teacher by day...and currently NOTHING by night. I finished my masters in December (Educational Development and Strategies) and I'm waiting for graduation in May (although they "graduated" me in January so I could get my pay raise early). I'm looking toward getting a second masters in Educational Technology starting this summer...possibly turning that into a doctoral program. We'll see...

                                I have fallen off big time.

                                I need to get back on. The rotating schedule with my work, socail life pickign up,and stress at home have all contributed to me falling off...

                                The most motivating thing for me to check myself and get back here was going on FitDay and seeing my goal chart, and I was "beating" my own timeline until I went off... I've been off for about 11 days now...

                                I'm not going to pretend like I'm going to be good for the rest of the day, because I know I'd only disappoint myself because I'm going to the bar later with friends, and let's face it... Green beer is a staple on St. Patty's Day. (Ok, ok, I'll try to stick to Captain and Diet)

                                I'm not letting myself fail this time. I will be strong and come back, the next few days are probably going to be tough with new withdrawls again, but it's worth it. I love this WOE and the carbs and chestpains when I eat them are not worth it. Nor is the complete absense of energy.
