  • I love eggs.

    I made hubby sloppy joes for supper tonight complete with grilled buns, baked beans and potato chips.

    So, I took some of last night's cabbage and fried it with some bacon in my skillet. Then I dumped a couple of eggs on top of it and scrambled it. Dear Lord. It was so good.

    Then my second experiment of the day:

    Chocolate Butter

    I need to work on this. My mom makes cinnamon balls that are so good and I thought it could be tweaked for ATkins. She takes a stick of butter, a box of confectioner's sugar, a splash of vanilla extract, and a TBSP of milk. Mixes it all together and then pinches off pieces, rolls it into a ball and then rolls it in cinnamon. Seems like it would be easy to tweak, huh?

    So, I decided to do this with chocolate. I took a stick of butter, about a half cup of splenda, a splash of vanilla extract, a splash of heavy whipping cream, and some unsweetened cocoa powder. I mixed it all together and I have CHOCOLATE BUTTER.

    I can't bring myself to use the splenda equivalent of a whole box of confectioner's sugar so it didnt' turn out like mom's. What to do with chocolate butter??

    Put a stick in the chocolate butter and freeze it. Call it an Atkins fudgecicle. You'll make millions.

    I love eggs too. I never ate them until January. Well, I hadn't eaten them in 30 years anyway. Now I brown hamburger and taco seasoning, toss in three eggs, some cheese, and a quarter cup of milled flax seed. This is two meals easily. I usually top it with hot sauce and sour cream.

      Funny you mention that. I was going to take some of the hamburger out before I added the sloppy joe stuff and add that to my eggs. I decided on bacon instead.

      But that little concoction you're talking about sounds GREAT.

      What is the point of the milled flax seed? Just fiber or does it actually do something for the dish?

        Just fiber, but for two reasons. The fiber along with the water keep you feeling fuller longer, and my HDL is very low, I need to add fiber anywhere I can. My HDL was 29 last time it was checked and normal is above 60. My total cholesterol was only 134, but I need to raise the good stuff for a better ratio. I am getting it checked again the first week in April. That will be after two months of serious exercise and serious fiber. I go through two boxes of flax seed a week.

          Ok, I bought my first box of it about a month ago and the only reason I haven't bought another is because I'm boycotting Walmart and our local Bilo doesn't sell it.

          Anyway, I was eating it with two ounces of cream cheese, splenda, and butter. All mixed together and microwaved for a few seconds. It kind of had a cakey texture and it was so good.

          Not to mention, it kept me real regular through induction which was pretty unbelievable. I think I'm going to have to break down and go to Walmart. Sigh.

            MMM CHOCOLATE! Sounds amazing, no fair! i'm trying not to have sugar substitutes during induction. Here are two ideas:

            ***You can roll into little balls and freeze and then you always have a small 'legal' treat available (if you are eating nuts at this point, roll some in chopped nuts)

            ***If i were really able to handle chocolate i would use it for chocolate crepes.

            -Just beat some eggs (add some cream if u like) and preheat a small frying pan with some butter, add enough egg to the frying pan to cover the entire diameter of the pan and create a very thin omlet (start w/ 2-3tbs of beaten egg, modify according to the size of your pan) and you have a 'crepe leaf'.
            -Use up all your beaten eggs and you will have a stack of crepe leaves.
            -After the 'Crepe leaves' cool,(very quickly) put a few spoonfuls about 1/3 of the way into the circle (to taste and again ti the size of the 'crepe leaf itself') and roll it up.
            -You can eat this cold, or warm them up in a covered buttered pan on a low flame, turning to warm both sides.

            You didn't say how much of this chocolate butter you made but if you have left over crepe leaves fill them up with sauteed mushrooms and onions or any vegatables, or mix in protein too.

            It's really uncomplicated like whipping up several small, thin omlets. I use these 'leaves' for all kinds of things, even for guests, and no one knows that it's induction food (well without the chocolate).

            If u want to add some ground flax to the beaten egg it may be easier to work with but i almost never do.
