  • This WOE is freakin amazing!

    So it's friday night...10:45ish...I ate dinner at about 6pm...6 inch cauliflower crust pizza with all meat toppings...mmmmm. Anyway...here I am, 4.5 hours later and I'm not the least bit hungry. I know this isn't shocking news to anyone that's done this before, it just never ceases to amaze me! I have no idea why on earth I ever abandoned feeling this way. LOL

    Typically, a friday night for me would be non-stop noshing on fast food and/or chips with the occasional alcoholic beverage.

    What's more...I made one of Sugar Free Sheila's recipes tonight, pumpkin cheesecake...which smells incredible, but even with the wonderful smells, I'm still NOT HUNGRY.

    If ever I'm thinking about quitting...I need to be reminded of this feeling.

    Successfully did Atkins in 1998 using 1992 copy of the book...before it was "hip". Lost 60lbs, exercised daily, felt and looked great. And then I moved in with a junk-food loving man, my mom got sick and passed away, then I suffered a spinal cord injury, and junk-food dude left me...and now I weigh 292lbs. That's 22lbs MORE than I weighed the first time around. It's 10 years later...I know this will work for me again.

        Here's the recipe:

        You should be careful with the amount you eat though. The whole recipe uses 1 cup of shredded mozzarella cheese, which is about 4 oz.

            Georgiana, can you believe it's 1pm the next day and I still haven't dove head first into the cheesecake? I did try a nibble of a crumb...i think it turned out really good.

            As for the pizza, I would recommend making 2 6 inch pizza's from the recipe instead of one larger one...unless you have someone to share it with. I live alone though. Also, I didn't use the full amount of cheese required...just didn't seem to need it. Next time though, I think I will try drying the cauliflower out more to hopefully get a crispier crust.
