    Good morning, STACer's!!!

    I just realized yesterday was 5 months on Atkins!! Results are not too shabby!! I can see inches melting and it's awesome! Size 10 jeans are getting loose and I have NOTHING smaller to graduate into. Not seeing much scale movement right now but I'm excited! The end is near. Time to move up a rung or 2.

        Happy Friday everyone...This seemed like a long 4-day week, then I realized I worked Monday... :doh:

        Got some work to do in the office, then off to the library to do research, then home. Got some steaks, chicken and wings thawing to make this weekend for dinners and for lunches next week. Going to try pork rind crusted chicken parm. Should be good.

        Curious about tomorrow's weigh in. Was 194 last time. If I hit 193, I'll be happy.

            TGIF!! 3 day weekend for me!! Going to the grocery store soon, run some errands then the rest of the day is mine. I really wish it would stop raining!

              Good morning everyone!!

              Finally feeling better! I am such a wimp when my tummy is upset. I had a rough week on the scale but things are looking up!! I am finally back down to 190 after seeing 191’s & 192’s all week. I don’t think I was eating enough due to the upset tummy… matter of fact I know I wasn’t! I was either skipping lunch or dinner since Saturday…

              Yesterday and last night I made an effort to eat more – got all my veggies in and enough calories…

              I’ve been on track with exercise.. and mentally feel great J

              Ev – I agree.. you should definitely start moving up some rungs.. you don’t have far to go at all and should find your carb limit soon.

              Burn – Gratz on meeting your 205 goal!! It’s such a great feeling to check off those goal boxes JJ

              Slap – pork rind chicken parm? Hmm I didn’t think of using those for the breading!!

              Oz – I hear you on the rain!! The weekend is supposed to be nice for lower New England .. hopefully that means wherever you are as well!

                Hey All!!! Today is the last day of school for the kiddies. We have a couple of days next week of post plan. YeeeeHaaaa!!!!

                Dana, crushed pork rinds and/or parm cheese makes the BEST breading for chix tenders. Also try on onion rings, mushrooms, pork chops and as a topping for casseroles instead of Ritz crackers.

                Try some fried green tomatoes with crushed pork rinds as the breading. Yummy! Dip it in egg, in the crushed skins, back in egg, back in the crushed skins. Fry on both sides in olive oil. MMMMMMmmmmmmmmmmm.

                  Hey all...I'm around and doing my best. Have a new goal to stay on track before a trip to Georgia I just booked last night. I'll be going in just a couple of weeks. I'm so excited!

                  Successfully did Atkins in 1998 using 1992 copy of the book...before it was "hip". Lost 60lbs, exercised daily, felt and looked great. And then I moved in with a junk-food loving man, my mom got sick and passed away, then I suffered a spinal cord injury, and junk-food dude left me...and now I weigh 292lbs. That's 22lbs MORE than I weighed the first time around. It's 10 years later...I know this will work for me again.

                    Happy Friday STAC'ers

                    Like Ev I have been back to this way of life since Jan 3.... Just about 5 months.

                    Although I am doing induction this week I have been moving up the rungs faster this time around. I did it this time around because I wanted more options and I wanted to follow the book closer. I can honestly tell you guys that I haven't really had any adverse reactions to adding them in. In fact I am now eating more variety than ever and cooking may new items with out thinking twice about it. Most of all I haven't gotten sick of eating anything (other than eggs and I will always have issues with them...).

                    Induction keeps me grounded. I can always go back after a weird experiment and it is easy. But I need to do this for life not just to loose some weight. I don't ever want to get back to where I was- so I need to make this WOL work for me and for me that means moving up and experimenting.

                    Burn congrats on your goal

                    Dana before you know it you will be 180 something leaving me in the dust! You must eat to win with this WOL. I have the same problem when I am not getting enough.

                    Kelly our schools let out last week. My GF in a teacher and she was so exhausted after the last day and packing up her class. Hang in there- it will soon be over.

                    Dana I have used that on fish as well. Good stuff!

                          I'm checking in a little late, too - well, 4pm Pacific time

                          As far as I know, we don't have pork rinds here in Canada.
                          I make a mean chicken dish with parm cheese, mayo and spices! Yummy in the tummy!!
                          Recipe: Depending on how much chicken, either 1/4C parm to 1/2C mayo OR 1/2Cparm to 1C mayo. I throw in garlic powder and Italian seasonings (what ever looks good). The chicken goes in a baking dish and I spread the goop all across them. Then I bake until cooked in a 350F oven.
                          Try it!!

                          Today I weighed in at 189.9 - still officially 190 (where, like you said, I was good enough to wait for you), but clearly on it's way down! It was nice to see the 8!!

                          Becki - Enjoy Portland!! I'd love to take a drive down the Oregon coast one day and your mention of Portland reminded me of that desire!

                          Julie - You've got it figured out perfectly! And you're doing so well!!
                          Just like you and Ev, I'm just completing 5 months on plan. Damn we're good!!

                          Kelly - I'm envious that you get the summer off! I can think of so many things I'd rather be doing then coming HERE every work day!

                              I do that chix thing that you do with tilapia or salmon. OMG!! It is to die for. I swear to you, it's a "company" dish. Don't know if y'all use that phrase in Canada but here in the South, it means that it's good enough to serve to company! LOL!

                              I love it. I put a bunch of mayo in a bowl, add some parm and some garlic salt. Spread it over the salmon or tilapia and bake it until the sauce is brown and bubbly. It's super.
